Simple Baked Apples

This turned out very nice. I used Braeburn apples & left the skins on. I substituted the sugar with 1/2 Splenda & 1/2 Brown Sugar Splenda (see package for substitution amounts). I also used dried cranberries instead of raisins (pantry option, will try raisins next time). We drink Soy Milk, so I used that instead of whole milk. I also used a covered cassarole dish as other suggested & sprayed it with Butter Cooking Spray. There was just a little juice at the end but it was perfectly thick/thin. After tasting, I immediately called my mother and shared the recipe as my parents are both diabetic (diet controlled). This may also work nice in a pie crust...will have to try that and see how it works. This recipe is definately a keeper!

Jambalaya with Fresh Fruit

Yummy! I used Quinoa instead of the Rice since that's what I had. I also didn't bother putting it in the oven, just did it all in the saucepan on the stove. Only used pineapple (not other fruits) as others suggested. Sub'd turkey sausage (pre-cooked so added at end just after the shrimp was almost done cooking)... turned out great. Also used small yellow/red sweet peppers instead of green pepper and 1/2 a jalapeno. This is a keeper!

Apple Crisp II

Followed other suggestions and doubled the topping. Also used less sugar and 1/2 the water (I used Braeburn apples). Was great warm with Vanilla ice cream after Easter Dinner. Next time, I'll use slightly less water and a little less sugar.

Fresh Corn Pudding

Good..with modifications from other reviewers. Used butter to butter the pan, added nice crispness. Doubled the corn, used half of the sugar, wish I'd have used half of the salt, added cheese some inside, and a little on the top melted at the end. There is very little leftover for my lunch tomorrow!!
