Hearty Meatball Soup II

Reviewed: Feb. 11, 2010
YUMMY! So easy too. I added chopped celery and omitted the pasta all together because I was out, and used frozen meatballs. And it still turned out to be very filling. Goes well with some sweet corn bread. Oh yea, I also threw in 2 bay leaves and some italian seasoning. I thought that the herbs might of clashed with the onion soup mix, but it actually enhanced it. Thanks for a great recipe!!

Chicken Costa Brava

Reviewed: Jun. 30, 2009
Without a doubt, different, but OH SO good. I've never been a fan of pineapple, but this dish has changed my perspective... The flavors go so well together! My only suggestions are to use pineapple tidbits instead of chunks, and cut the chicken into bite size pieces before browning. Both times I've made this I served it over white rice. Definately will keep mAKING! Thanks Christy!!

Self-Filled Cupcakes I

Reviewed: Nov. 1, 2008
Wow. I hardley ever make cupcakes b/c they turn out dry. NOT the case with these sinful treats!! I made them for my Father-in-law's 60th b-day, and they were a huge hit! I followed the directions accordingly to measurements. I did however make the task simpler. I poured the cake batter into a ziplock and piped small amounts into the cupcake papers, so I would not overdo it, before I could get the cream chz in there. I also put the cream chz in a ziplock and did the same. Topped them off with another squirt of cake batter and popped them in the oven. To keep them from burning, Take them out when they still seem a bit jiggly. The cream chz needs time to cool, to set up. These again were awesome. And even better when they have had a few hours to cool off. I topped mine with pecan and almond frosting. Thanks for a great recipe.

Garlic Creamed Chicken

Reviewed: Sep. 25, 2008
Good recipe. I recommend it for a quick supper. Here's what I did. I doubled the recipe for the sauce. I cut the raw chicken up into bite-size pieces. I added a small jar of Pimentos for color. Other than that I followd the recipe accordingly. I'm glad I made the extra sauce, for we had it over No Yolk Noodles. Great easy recipe. Thanks TAMI.

Montego Bay Chicken

Reviewed: Aug. 14, 2008
WOW JULIE! Thanks for a wonderful marinade! I just finished my plate, and couldn't wait to give a review! What I did: Used Ronrico Rum, since I didn't have any extract, other than that I followed it to a "T". I did start marninating it after dinner LAST night, so it had a good 20 hours or so. I do reccomend this to any chicken lover looking for a different flare. Thanks again!!

Good recipe! Here's what I did: Followed everything except I used a packet of the dry Ranch dip. Mix accordingly to package. I also added some diced ham just cause I had some left. Great recipe! Thanks for sharing~

Key Lime Cheesecake II

Reviewed: Aug. 5, 2008
FOOLPROOF CHEESECAKE!! Here's what I did: Added three 8oz boxes of cream cheese; 1/3 cup of keylime juice; and 4 eggs. I also used a store-bought shortbread pie crust. It turned out wonderful! Not too tart. The perfect balance of cream cheese and keylime! I highly reccomend this to all. I call it fool proof because after it was devoured, the next morning I found the 1/2 stick of butter still in the micro... Ha! I forgot to add it but you wouldn't even of noticed! Great flavor and texture! Thanks so much for this recipe!

Thin Mint Crackers

Reviewed: Oct. 9, 2007
When I saw "Girl Scout Cookies", I couldn't resist trying this recipe out! I did things a bit quicker though- Substituting the chocolate with Andes Baking Chips. Just popped them in a bowl in the microwave, and drudged Chocolate Graham Cracker Sticks through the melted mint bliss! Layed them out on foil and let'em set in the fridge for about 15 mins. LOVED THEM. I'll be sure to keep these ingredients on hand to subdue my sweet tooth. Very simple. I'll have to rate it a 4 though since i just went by the basic idea. Thanks!!!

Brown Sugar Smokies

Reviewed: Sep. 4, 2007
I made these for a Labor Day cookout, to munch on while we waited on the BBQ. And I must say that these were also a BIG HIT at my get-to-gether. I dont think they lasted 30 mins! Thanks for a great appetizer, and thanks to the others who reccommended not to "skimp" on the brown sugar! I thought I might of been overdoing it a bit, but in the end, I realized its the ingredient that makes these WONDERFUL.
