The Best Thai Peanut Sauce

Seriously, I could put this on's incredible. I probably used 1/2 c more coconut milk to thin it, and used crunchy PB.

Iced Pumpkin Cookies

I would give this recipe a gazillion stars! I made them on a whim yesterday after work to take to a church event. I love the not terribly sweet, cakey cookie with the supersweet spicy glaze drizzled on top. Absolutely one of my favorite ever cookies that I'll make over and over!

Peach Cobbler II

Sadly, this recipe as written is a flop for me. I wanted to love it. It's far too sugary and the pan is too small and there are not enough peaches. If you decide to make it, seriously consider the other reviewer's suggestions. I made it by the original recipe, even omitting half the sugar on the peaches, and it was just...syrupy. The peaches I used were flavorful, but it got lost in the overpowering syrup. I think modifications on this one are probably on the money.

Very Simple Spelt Bread

This recipe is GREAT! I'm a single mom, and while I love baking bread, I've not had the time to try a yeast-raised wheatless bread. It has a texture similar to the whole wheat soda bread I used to make, and I think I'll try buttermilk in the next loaves. I used sunflower and flax seeds, and maple syrup. This is a real treat!

Grandma's Lemon Meringue Pie

Very, very good recipe. I followed it more or less with exceptional results. I would say that I used a bit over a half cup of lemon juice. For those who don't care for zest, I urge you to rethink. Grandma probably didn't have a lemon zester, but a box type grater and she most likely used that. I zested three lemons using the coarser side on the box grater, and the pie is very lemony, but no hunks of zest. This is a keeper for sure.
