Authentic All-Natural Mexican Food. Luckily, I speak Spanish so I usually look up these recipes in Spanish and add my own flare to it.

Salsa De Tomatillo
Great recipe! If you find that the tomatillos are a little acidic add a pinch of baking soda to the mix. Less than 1/4 of a tsp. It'll neutralize the acid.

Buffy's Refried Beans
It was surprisingly good. I just needed something good enough for a side dish, but everyone loved them! I did substitute 1/2 a cup of butter instead of the lard. I also substituted chicken broth instead of water which was probably what made the recipe so good. I also added 2 cloves, and about 1/4 of an onion for flavor. It did come out a little to runny, so next time I am going to add another can of pinto beans.

Layered Chicken and Black Bean Enchilada Casserole
Absolutely amazing. I made it last night and just finished some for lunch! I did change a few things though. I added 1/3 tsp. of GARLIC POWDER, 1/3 tsp. of SALT, 1/3 tsp. of CHILI POWDER, 1/3 tsp. of SAZON GOYA (with coriander and annato [for more of an authentic mexican taste]), 1/3 tsp. of PEPPER, 1/2 of an ONION, and 1 clove of GARLIC. I added all the above while seasoning the chicken. I also accidentally put in a 10 oz. can of green chiles with tomatoes (Rotel) and it came out great, I would definitely recommend it to others!
