This recipe is so wonderful! I didnt have enough bananas so I used 1 cup mashed banana (2 bananas) and 1 1/3 cup apple sauce. I also realized after Ihad already started that I only had half the amount of butter, so I completed the required amount of butter with some smart balance from the tub. The first time I made it I let it bake for 60 minutes and it seemed somewhat mushy inside. After a call to my mom, an amazing cook, I learned that the bread will still cook for a while even after it is out of the oven. And was she right! After letting it sit for a bit it was just perfect! My husband even said he liked it with the apple sauce cause it didnt taste too bananay. I made it for the second time last night and I added 1/2 tsp of vanilla and used 3/4 of the amount of butter (I used I cant believe its not butter to keep it a little more healthy). I also used 1/2 all purpose flour and half whole wheat flour. I cooked it for 65 minutes instead. It was better the first time for sure! I guess once you have a great thing, dont mess with it!
