Salsa Chicken

This recipe is wonderfully simple and delicious. I, too, used a plastic zip bag into which I poured a package of Old El Paso cheesy taco seasoning. I used 6 boneless skinless chicken thighs and most of a bottle of Pace mild chunky salsa. Otherwise I followed the recipe as written. I'll be making this one regularly.

Corn Bread Turkey Casserole

Our church ladies used this recipe with the turkey leftover from our whole church Thanksgiving Dinner. We served it at our December birthdays and anniversaries celebration, and it was quite a hit. Most who weren't involved in the kitchen work found it difficult to believe it was Thanksgiving's leftovers. We substituted chicken broth for the evaporated milk and used a four cheese blend rather than just Swiss cheese. Although the original recipe is for 3 large casseroles which worked fine for serving our church, it is easily scaled down to a single casserole. If you are responsible for feeding a large group, this is a recipe worth trying.

Sicilian Pineapple Pork Roast

I've made this twice now. The first time I used a pork shoulder roast and followed the recipe pretty faithfully. This time I used a pork loin and crushed pineapple. I also opted to cook it in my slow cooker and used my temperature probe to determine when it was done. This makes a very moist and tender dish. The tomato/pineapple sauce makes great gravy, too.

Chicken Cashew Salad

I read the reviews and was intrigued by the unusual combination of ingredients in the dressing for this salad. I, too, must agree with the majority of the reviewers. This is an absolutely delicious salad. I intend to see if it tastes as good with light Miracle Whip and Splenda brown sugar blend, but this first time I used full calorie ingredients.

Lemon Custard Pudding Cake

What a refreshing, light textured dessert. I used about 1 3/4 cups of sugar and 3 tablespoons of fresh squeezed lemon juice. Next time I'll use all the juice the lemon produces. This one will definitely be made again. Thanks.

Quick and Easy Pimento Cheese

This was delicious. I opted to use mayonnaise rather than Miracle Whip, although I am generally a user of Miracle Whip only on sandwiches. I followed a suggestion from some of the other reviewers and added a dash of Worchestershire sauce. Price's won't be getting my business anymore. Thanks for the easy and quick recipe.

Cake Balls

After reading through several dozen reviews I decided to follow "AnaAH"'s recommendations. I used a Red Velvet cake mix and crumbled it while it was still fairly warm. I didn't bother with microwaving the frosting, but I definitely used the "Whipped" variety. I think this was important. Absolutely key to a successful outcome is the refrigeration and freezing times. They turned out beautiful and delicious. A hit and well worth the effort. Thanks to the orginal submitter and to the suggestions of those who blazed the trail.

Judy's Strawberry Pretzel Salad

I decided to make this for a church "Dinner on the grounds" today. There were NO leftovers and many requests for the recipe. Loved the taste combination of salty and sweet...Hard to beat.

Crunchy Chicken Balls

Delicious and so easy to make. I toasted the pecans a little before rolling the balls in them and used Miracle Whip rather than mayonnaise since we prefer it.I will definitely use this one again.
