Easy Roasted Red Pepper Hummus

Here's a little factoid to those who don't know: chick peas are the same thing as garbanzo beans. This recipe is exactly what it claims to be: EASY roasted red pepper hummus. Roasted red peppers add a unique sweet flavor to the beans and tahini, making this a refreshing step away from more traditional hummus. If I could add to this recipe without detracting from the ease of preparation, I would suggest that olive oil be poured over the top as it sets at room temperature prior to serving.

Fantastic Black Bean Chili

I find it really annoying that people consistently score recipes based on their own modifications. This recipe is BLAND! The selling point is that it is healthy and simple. Adding a great deal of spice and ingredients (which would increase the prep time) will make this a lot more complex and exciting, but alone the recipe is simply mediocre.

Blackberry Pie I

This recipe produced a decent pie. The filling was too stiff with flour and the bottom crust came out a little soggy without the egg seal. Still, the presentation was beautiful and my guests thoroughly enjoyed the flavor of the wild berries.

Byrdhouse Spicy Chicken and Peaches

This recipe is a great way to use up all of my frozen peaches from last summer. It's easy, relatively quick, adaptable for varied tastes and pretty unique! I put it on rice, rice noodles or eat it alone. I think I'll add cashews next to see how it tastes with a little crunch. Thanks for the great recipe!

Spicy Mango Sweet Potato Chicken

The flavor was exactly what one would expect from the title, a complementary mix of heat and natural sugars. The soft texture of the boiled sweet potatoes added a point of interest to the dish. The sauce, however, was a little too thin, even after adding corn starch and simmering for a bit longer. Still overall a great Spring meal!

Dreamy Nighttime Drink

The drink as is tasted like chai flavored milk. However, this warm, mildly spiced drink coupled magically with some peach jam thumbprint cookies and although we weren't sleepy after consuming this snack, we were very satisfied!

Pebber Nodder (Danish Christmas Cookies)

Very edible little bites that are a great filler cookie for holiday plates. The unique bite of the cardamom makes them almost refreshing and very easy to pop into your mouth one after the other. I think they are versatile enough to merit the addition of a wide variety of tasty decorations. The one change I suggest after making the recipe several times is baking them an additional two minutes to make the outside of the cookie just a touch more crispy without betraying the soft shortbread insides.

Catherine's Spicy Chicken Soup

I was disappointed. This made quite a bit of soup that I'm not sure what to do with. It essentially amounted to a vat of shredded chicken in thin tomato broth. Smothering it with tortilla chips and sour cream added a touch of life.

Asparagus Quiche

I substituted fat free evaporated milk for the cream and added less than a cup of swiss. The taste combination was flavorful, but dated; I rated this at three stars because I felt as if I time warped to the 70's through my mouth.

Eggplant Bake

I tried this recipe as an attempt to recreate a dish I enjoyed at a friend's home. The oil amount was not nearly enough to properly cook the eggplant through prior to baking, resulting in dry, stiff layers of eggplant. I wouldn't recreate this without adding more oil during the fry process and cutting out some of the contrasting and busy flavors.

Delicious Ham and Potato Soup

A taste of home! I didn't have bullion or chicken broth, but the Yukon gold potatoes, slightly increased amount of chopped ham and one hour simmer time seemed to still yield a delicious soup that matches the description of the recipe author and other reviewers. Thank you for this, my new favorite potato soup recipe.

Iced Pumpkin Cookies

What a unique cookie recipe! I substituted one cup of white flour for whole wheat flour and didn't notice a difference in flavor. As suggested by another reviewer, I substituted brown sugar for half of the white sugar amount as well. My friends, boyfriend and coworkers swooned over these "muffin top!" cookies. My mouth is watering just typing about it!

Summer Squash Bread

I enjoyed this bread set in a loaf pan. The soft, warm center of each slice was perfectly complimented with a smear of butter. My second attempt at this recipe involved a muffin crown pan, which did not generate as great of a product; half of the delight of a bread like this is that soft center of the loaf. Thanks for the flavorful and easy recipe!

Cowboy Cookies III

This is the best cowboy cookie recipe I've worked with! I followed suit with other people and dropped the sugar to 3/4 cup for both brown and white. I substituted whole wheat flour for half of what the recipe called for. I increased the vanilla to two tsp and added one cup of chopped walnuts for increased texture. Again, as others suggested, I increased the oven temp to 375 degrees. This generated an attractive, soft cookie with a hint of outer crunch fresh out of the oven. Thanks!

Summer Squash Casserole with Nuts

With some slight modifications to my taste this dish turned out quite nice. I used herbed white cheddar and I sauteed garlic, onion and the peppers for a few minutes. The texture the pecans add really gives some depth to the dish. In the future I'll avoid steaming the squash first and leave them in slices rather than mashed as the dish was a bit too soft for me.
