Pasta Fazul

This was amazing. My boyfriend and I inhaled it and went back for seconds. I ended up using two cans of cannellini beans. They have such a great texture! I also used a can of diced tomatoes instead of whole and used dried parsley instead of fresh. Yummy!

Pasta Bake

Anything this cheesy is going to go over well at my house. ;-) I took the advice of others and mixed only 1 cup of the mozzarella into the pasta, then I stirred it after 10 minutes of cooking, then added the other cup of mozzarella on top and cooked for the other 10 minutes. It was delish and fun/easy to make.

Best Ever Split Pea

This truly was the best ever split pea soup. I didn't use celery and put a little turmeric in instead of the seasoning blend. I also didn't need to puree any of it because it came out perfect without it. :)

Butter Bean Burgers

Very good, although I changed a couple of things. I used panko bread crumbs instead of crackers. I omitted the cheese because I didn't have any. I added a fourth of a teaspoon onion powder. I let the mixture sit in the fridge for a few hours before forming the burgers (which helped a lot). And finally, I dipped the burgers in corn meal before frying. I served them on lightly toasted sesame seed buns with mayo, tomato slices and lettuce. They were delicious. Even the pickiest eater in the house liked 'em!

Carrot Cake III

Whenever I make this cake, I feel like a genius! It is SO moist and tastes SO good. I subbed applesauce for half the oil and only used two cups of powdered sugar in the frosting, which was perfect. NOTE: I recommend sifting the powdered sugar. I couldn't get the tiny lumps out! I finally put it in the blender and that worked great, though!

Pumpkin Pancakes

PPP - perfect pumpkin pancakes. I didn't have a problem cracking the eggs right into the mix instead of scrambling them first. And I used a full teaspoon of cinnamon (but then, I love me some cinnamon). Made these for breakfast Halloween morning! Yummy.

Very easy and tasty, and the common ingredients are so convenient...I didn't even have to go to the store. :) I made skewers and grilled them on the George Foreman...everyone in the house liked them!

Parmesan and Basil Chicken Salad

This is so awesome, I've already made it twice this week. I didn't follow the measurements, just used my own personal taste. I also omitted the garlic just to save everyone's breath. :) Try this on toasted ciabatta rolls with some fancy chips.......it's to DIE for!!!

Sweet, Sticky and Spicy Chicken

I used low sodium soy sauce and doubled the sauce and am glad I did both! I added some broccoli florets, served it over brown rice, and topped it with chopped scallions. My boyfriend SCARFED it down! It's really yummy and easy to make!

Salmon Cakes II

I didn't really measure anything, just eyeballed it, and the cakes turned out deeeelicious. I only made a couple changes...I used dried parsley and instead of bread crumbs used a prepared chicken coating that I use for everything because it's sooo good! I also recommend frying in peanut oil instead of olive oil and butter - the latter mixture burned way too fast!

Corn and Chicken Chowder

I made a couple of changes. Used bacon instead of ham, used whole milk, used canned corn, and thickened with corn starch. It was so good - EXACTLY what I was looking for!

Fluffy French Toast

Delicious french toast! Very good flavor, everyone loved it (even the people who had to eat it with gluten free bread). I doubled the cinnamon, added 1/2 tsp nutmeg, used Texas Toast and topped it with sifted powdered sugar. It doesn't make 12 servings, though! :)

False Cabbage Rolls

Very tasty, hearty and healthy. My stepdad, who was sure he wouldn't like it, ended up asking me to make it again as soon as possible. I only changed a few things - I added dried basil and parsley in a 2 to 1 ratio (about a tablespoon or so of basil). I also used two cans of tomato soup that weren't concentrated, and two cans of petite diced tomatoes. I simmered for an hour and added cooked brown rice at the end. The sour cream was a GREAT touch. When I served my boyfriend he actually asked for sour cream and I got to tell him it was already in there. :) I let everyone add their own hot sauce to taste. SO YUMMY! I'm making another pot of it right now and can't wait to dig in.

No Beans About It - Chili

I needed a chili recipe for chili dogs. This was good, but needed more spice - it didn't have enough of a real "chili" flavor. I substituted the vinegar for worcestershire sauce as some suggested, but I won't next time, as it made it taste more like sloppy joes than chili.
