Sopapilla Cheesecake Pie

This is almost a weekly occurrence at our house. Kids love it! Teens ask for it every time we have company. My high school student has taken it to school no less than 5 times this year. The honey just makes the recipe!

Smooth Sweet Tea

I made this at Thanksgiving and it was the biggest hit! Everyone said it tasted like Chicken Express Sweet Tea and 2 gallons were gone in no time. Absolutely PERFECT!

Chocolate Trifle

I made this for a church luncheon and the gals told me I was evil! It was a hit. Very rich and delicious! I used some of the suggestions about using whipping cream and I actually had some Heath toffee bits that I sprinkled over each layer. In my pantry, I had the brownie cookie bar mix and it was so wonderful - I chopped them into very small squares to layer in the trifle.

Rocky Road Ice Cream

I made this one Saturday morning for the kiddos and it was gobbled up. Very delicious!! Great recipe. I did use Half and Half - it was cheaper - but it was still excellent!

Strawberry Spinach Salad I

I made this for a Mother's Day Salad luncheon at church, and it was one of the first salads to be demolished! I had a lady come up to me days later and ask if that was my salad and when I said yes, she confessed she went back 3 times for more!

Broccoli Rice Casserole

Really good recipe for Easter lunch. I had everything except celery (which we don't like) and cream of chicken soup. I used chicken enchilada soup that I had in the pantry (so I cut the water down by 1/4 cup) and it made such a great flavor. I also always use dried minced onions because my family doesn't like the texture of cooked onions.

Fruit Pizza II

Took this to Administrative Professionals Day at work for all the hard working women in my office and they LOVED it! Many commented on the orange glaze - I had made fruit pizza many times in the past without the glaze, but they really seem to love it, so I am keeping this one in my recipe box.

Sweet Dinner Rolls

Made for Easter lunch this year and much to my dismay, the dog jumped up on the counter and ate the dough while I showered for church!!! They are so easy to make, so I was able to make a second batch in time in between services. The kids ate more bread than anything else that day. These were a hit with us and the animal!!! :)

Easter Breakfast Casserole

Took this to an Easter breakfast at church. Made two pans and they were demolished! I prebaked the has browns some as others suggested. I did not have bacon so I used sausage. Loved it!

Crispy Fried Fish

I made this last night. My 23-year-old son high fived me after eating because he thought it was so good! He's a health nut, so instead of frying the whole batch (We probably had 3 pounds), I baked a few pieces in a 400 degree oven until crispy brown and my oh my it was just as good on the baked pieces!! The batter went plenty far - I didn't have to make anymore for the 3 pounds of fish. I just had to make more crushed corn flakes.

Best Bread Machine Bread

This bread turned out so fresh, soft, and delicious! I have made it twice and the second loaf was better than the first. I think the first loaf -I didn't let the yeast foam enough and maybe my water was too hot. Last night, I made it again and the foam was good and thick and I made sure the thermometer was right on when I let my yeast dissolve. It rose to the window! I sliced off a piece for the kiddos and they asked me why all the other breads I have been making weren't this soft? I guess this is THE bread from now on! Things I changed from the first loaf: added a dash more salt and used honey instead of sugar and olive oil instead of vegetable oil. LOVE THIS BREAD!!

Double Chocolate Biscotti

This was my very first shot at making Biscotti - daughter had to have an authentic Italian food for a project at school. I read all the hints and tips plus I watched a couple Youtube videos showing how to handle the dough, etc. Turned out excellent and had several moms ask for the recipe. My daughters asked me to make it again for the family this time.

Sausage Balls

Made this recipe 5 times over the holidays for various gatherings and there was never a morsel left at any of them! SIMPLE, easy recipe. I did let the sausage sit out for about 20 minutes as suggested by others and the trick to a perfect sausage ball every time is taking the time to knead until all ingredients are WELL combined.

Quick and Easy Brownies

Excellent, quick and easy! One word of caution as I just finished making my 3rd batch today for a youth function tonight...on the first batch, I was lazy and dumped all ingredients and THEN mixed with a wooden spoon. Still tasty, but a totally different color and slightly different texture as the ingredients settled a little more unusually. The last two batches, I mixed with a WHISK after EACH additonal ingredient. Fantastic texture and rich chocolatey color! It made a big difference whisking after adding each ingredient. My husband is a very picky brownie eater and he tried one and said they were delicious! No more brownie packages for me! I also eliminated the extra 1/2 cup flour and used only one cup.
