This bread turned out so fresh, soft, and delicious! I have made it twice and the second loaf was better than the first. I think the first loaf -I didn't let the yeast foam enough and maybe my water was too hot. Last night, I made it again and the foam was good and thick and I made sure the thermometer was right on when I let my yeast dissolve. It rose to the window! I sliced off a piece for the kiddos and they asked me why all the other breads I have been making weren't this soft? I guess this is THE bread from now on!
Things I changed from the first loaf: added a dash more salt and used honey instead of sugar and olive oil instead of vegetable oil.
