Me and My little inspiration
About this Cook
I am a single Dad. I have been cooking for my family for 30 years. My late wife, God rest her soul, cooked as well. I learned to cook from watching her and modifying some of the dishes that she cooked. I learned to cook along side of my wife and mother as well. I was put to the test at culinary school as well. I would consider myself knowledgeable in most ingredients. I have been able to cook for my family for quite a while now.
My favorite things to cook
My Favorite things are: Farm to table and various meats. I have a full garden with veggies galore. It is the most pleasant feeling to go and pick and cook the things you grow. I love to cook on the grill, also, like to fry Chicken in the Fryer. More on that later.
My favorite family cooking traditions
I have 3 sons. They all know how to cook definitely the basics. But, love to cook what MOM used to make. We love the down home cooking as well as the " As my eldest son would say," sometimes out there type of dishes. They all love the roast and carrots, potatoes. But are not limited to that.

Easy Meatloaf
Add : Green pepper, Red pepper (1/2) of both. Half an onion. Ketchup.

Chicken Enchiladas I
I found this recipe as a great base but did some modifications such as Green Chilis and green onion, as well as instead of the taco sauce I use a can of Enchilada sauce to coat the bottom of the dish and cover the enchiladas themselves. Turned out great. I didn't add water. And I only added 1/2 taco sauce. The rest is in the picture and the tummies of my family which went for 2nd's which is rare. A WINNER for a base be creative.

Stuffed Green Peppers I
My family loved this dish. However, I do want to add that make sure you don't boil the peppers for more than 4 min. They become to flimsy and tear. But, overall GREAT!
