Squash Pie

My family was TOO FULL to try this, but my coworkers RAVED the next day! Nice and light, with great texture and flavor. My in-laws have begged me to make it again for Christmas Eve, and they promise to save room this time.

How have I not reviewed this favorite recipe before? This is one of our beloved Sunday breakfasts and the flavor options are virtually endless. Perfect springboard recipe for the creative (and sleepy) chef!

Extra Extra Rich Brownies

Fudge-like texture and super easy to make when you find that you don't have any eggs and are too tired to drive to the store. I used dark chocolate cocoa powder, so these came out looking like coal, but tasted much better.

Cara's Moroccan Stew

Fabulous! I skipped the lentils, and instead made spiced turkey meatballs (ground turkey,breadcrumbs,dehydrated onion, cinnamon, cumin, salt & pepper, and fresh mint)and dropped them in after browning them in the oven to let them finish cooking in the stew. I served it with curry couscous, plain Greek-style yogurt and more fresh chopped mint. Family approved!

Awesome Pasta Salad

Grandma's Lemon Meringue Pie

This was my very first attempt at Lemon Meringue Pie, and it turned out just lovely. I used the juice of 4 large lemons for extra lemony flavor, and the curd came out perfect. Unfortunately, my meringue 'beaded' after 3 hours in the fridge, but that might have happened due to my beginner's mistake of not letting the egg whites get frothy before adding the sugar and possibly adding too much. Anyway, my friends LOVED IT and didn't even offer to send any back home with us. The mark of a truly enjoyed dessert! :) The video helped tremendously as well - Thanks Emilie!

Key Lime Pie VIII

I cannot tell you how many times I have made this recipe, but every single time has gotten rave reviews! Yes, this is the slacker's version of Key Lime Pie, and the purists out there will be all up in arms over the pudding mix and frozen topping, but at the end of the day - it's AWESOME. I use the wee little limes from Mexico, since I live way too far away from FLA to get the real deal, and I give myself carpal-tunnel while reaming every single one of those little suckers for every drop of juice they will yield, but the mouth-watering tartness is totally worth it. Total Dessert Win, Every Single Time.

Caramel Brownies

Instead of melting caramels, I used a caramel apple kit and trimmed one of the giant circles of caramel to fit over the brownies. It totally worked! Gooey and delicious!

Nutella® Cheesecake

I have made this as written and by adding a container of frozen whipped topping and then poured into a brownie crust as suggested in the reviews - both versions are totally TO DIE FOR! I, for one, believe there is never such a thing as too much Nutella in your life. :)

Chimichurri Sauce

Consistently excellent! This is our favorite sauce to make for summer grilling when we don't do Korean BBQ. We've made this as written and also with cilantro and basil instead of parsley and it turns out great every time. Highly recommended!

Delicious and easy- Even with making the meatballs from scratch! I used organic beef stock instead of the bouillon cubes, added garlic powder, salt & pepper to the meatball mixture, and cut the spiciness of the salsa by using 1 cup of canned fire roasted tomatoes and one can of fire roasted mild chilies. Next time, I will try to cut the fat a little by baking the meatballs in the oven until halfway cooked and then finishing them in the soup to get the flavor through the meat with less oil pooling on top. Husband had 2.5 bowls = success!

AMAZING. We made this with 100 manila steamer clams and it was SO GOOD! Our few tweaks were fresh parsley, a pinch of dried onion and fresh squeezed lemon juice. Even our 9yr old raved!

Smoked Paprika Goulash for the Slow Cooker

So tasty! I modified this to cook on the stovetop since I didn't have 4-5 hours to make it as written. Smoky, rich and flavorful sauce that my daughter and husband raved about - next time I will plan ahead, add green bell peppers, tomatoes, potatoes and carrots and use my crock pot. Maybe I'll challenge my mother-in-law to a goulash cook-off!

I have made this a few times now and it is ALWAYS a hit with our family! It makes a LOT of soup, so expect leftovers for a family of four. Great dish to feed a crowd too!
