Chocolate Toffee Crunch Bars

I make these every year for my work cookie exchange. Delicious and easy but I wish my co-workers wold let me try something else for the exchange :-) It is a hit everytime! Easy too!

Tofu and Rice Stuffed Peppers

My husband was NEVER a huge fan of tofu until this recipe. Simple and delicious. I stir all the ingredients together at the end rather than layer to keep everything simple. My husband now asks for this more than most other of the recipes I make! HUGE SUCCESS!

Butter Chickpea Curry

I made this recipe for the first time tonight because I needed to make a quick meal and had everything I needed in my fridge and cupboards. I omitted the garam masala because I didn't have any here and pureed some canned tomatoes instead of using tomato soup because that is what I had on hand. I never use onions because my husband is allergic. This was a delicious and incredibly simple meal to make and I will definitely make it again - next time for friends!

Black Bean Salad

One of the best beans salads I have tasted and super easy! I defrosted frozen corn instead of canned because that is what I had on hand. I added the minced jalapeno to the italian dressing as my first step, to avoid hot spots in the salad like another reviewer recommended. Once I had all the ingredients together, I poured the dressing mixture onto the salad. Although I love avocado, I would omit it for next time. It makes the salad look a little "slimy" for a lack of better words.

Tomato-Cream Sauce for Pasta

Super easy, Super yummy! Two thumbs up from hubby :-) The one thing I have to say is remove pan from the heat for at least 5 minutes before adding the cream. The first time I made this, I didn't take it off the heat long enough and the cream curdled when I added it.

Cheesy Ham Cups

I have made these at least 3 times now as the recipe states, except that I omitted the onion on 2 of the 6 each time because my husband is allergic to onion. They were a huge success and so easy! I think if you dont have ramekins, you could use muffin tins and they would still be delicious. I let them cook an extra 5 minutes or so, because the eggs are very moist otherwise. They are a staple for brunches around here!! The yogourt adds so much to the egg!!

French Breakfast Puffs

I made these for my mom's birthday brunch. With the word "puff" in the title, I expected a light and fluffy pastry, but they came out more like a muffin. I was concerned until I rolled them in butter and the cinnamon sugar! My mom and sister both liked these alot and brought the leftovers home. Don't be deceived by the name and you will have a yummy, easy breakfast addition!

Butternut and Apple Harvest Soup

This is a simple and delicious fall soup. My husband can be pretty picky and squash tends to scare him but when he tried it, he loved it! I omitted the onions/leeks, because he is allergic to them and added onion powder and cumin at the beginning with 1 small clove of garlic. I used Pepper Squash instead of butternut because that is what I had in the house. Everything came together very easily and was really tasty. I will definitely make this again and am already planning a menu around this soup for my next dinner party with friends.
