Shrimp Fried Rice II

I didn't like this recipe for varying reasons. First ... it was overly salty. Second ... it was mushy. Third ... it tasted not like Asian shrimp fried rice but rice with shrimp. Fourth ... it was simply okay but didn't taste in the least bit authentic. Fifth ... I think that the eggs should have been cooked separately ... they did not taste cooked ... kind of a raw texture. I had to cook it and cook it to get the eggs well-done. Sixth , husband thought it was ok. I will use a different recipe next time or alter this one. Less soy sauce ... cook eggs separately ... more Asian spices ... this was very bland. More veggies. Everything stuck to the pan ... I had difficulty with that. A real bummer. Sorry.

Chicken Pot Pie I

I changed a few things ... used two cans of soup ... cream of chicken and cream of celery ... added lots of spices. Sautéed onions and mushrooms in butter ... added to mixture ... it turned out GREAT except for one thing??? I used Pillsbury pie crusts ... they were too small and too sweet. I will definitely make this again but I will use a different crust. My husband loved the filling but refused to eat the crust. He thought that it was overly sweet and so did I. Without the additions, I feel that it would not have been too bland.

Easy Blueberry Cobbler

Okay ...I said that I would let you know. Tons of butter ... BUT ... this is something that is eaten on rare occasions (at least I would) ... but I must say ... this is a w o n d e r f u l recipe ... and I give it five stars ... but only for guests or on occasion. As I stated previously, I used blueberries, one apple and a couple handfuls of raisins (soaked in rum) ... I didn't have enough blueberries ... it turned out SO FAB I CAN'T TELL YOU. Next time I will try peaches or apricots or whatever is handy and in season at the time ... juicy fruits are better. Yum recipe to be used over and over and over again because of its easiness and its versatility and it's yummyness. I totally recommend trying this recipe as stated with a changeover in fruits if you like. I won't cut down on the butter ... but I won't make it often with this amount of butter. I used a soufflet type dish ... one of those round white sizeable ones. GO FOR IT!!!

Mayonnaise Cookies

OMG ... these cookies are so yummy. Tastes like a really rich sugar cookie. I followed recipe verbatim. Crispy. Delicate cookie. I baked mine for maybe 14 minutes. The dough for me was easy to work with. Next time I will add peanut butter!!! Perfect peanut butter cookie recipe. Reduce a bit of the mayonaisse and add lots of peanut butter. I used cinnamon sugar on top ... devine!! Mine are really pretty too!!!

Harvested Chicken Stew

I added tons of spices ... cream of celery soup instead of celery ... made cheesey easy drop biscuits increased amount of chicken ... I bought one of those rotisserie chickens ... used the breast and a bit of the dark meat as well ... will use the rest for sandwiches tomorrow evening for din din ... I will serve over white rice ... it tastes good but a little 'sweet' for my tastes ... peas and corn and carrots ... all sweet ... but it is so darn easy ... I strongly suggest making it when you are tired of cooking and just tired with little time. Go for it!!! But add lots of yummies, otherwise, it will definitely be too bland.

To Die For Blueberry Muffins

These were F A N T A S T I C!! But, I know that this is a no-no but I changed the recipe a bit and they were such a hit!!! Here's what I did ... I followed the recipe verbatim with these exceptions: I used 2/3rds cup vegetable oil, two eggs and omitted the milk ... I used raspberries because that's what I needed to use up ... instead of the topping, I used cinnamon mixed with sugar and sprinkled on top with a dap of butter ... that's it ... they were so delicious ... I followed the recipe otherwise. Try the changes. They were beyond moise, rich and beautiful!!!

Crispy Rosemary Chicken and Fries

Okay ... here's how I made this and it was beyond fantastic ... I used chicken thighs bone in skin on ... I used red potatoes ... I used rosemary and the rest as recipe suggests ... I put everything into a huge bowl ... olive oil, rosemary, oregano, garlic powder, salt, pepper (lemon pepper) ... (lots lots of all spices ... I used dried spices) ... mixed everything with my hands ... in the big bowl ... then I poured everything on to a cookie sheet type pan ... I used one of those round ones used for pizza ... a really big one ... then after doing all of that, I added a little more seasoned salt (Lawry's) ... pepper and rosemary on top of everything including putting rosemary under the chicken skin (all very very easy and fast) ... then I allowed all to sit for perhaps two hours ... room temp ... baked 375 for precisely one hour ... maybe a little longer ... everything was brown, crispy and totally yummy ... I made it for my husband and myself and we loved it!!! It was very rosemary-ee ... smelled lucious during the cooking process and a dish that I would serve to guests ... really ... I served it with quickly boiled brocolli and a small salad ... too good ... I will definitely keep this in my arsenal of weapoons ... but what I really love about this recipe is it's ease of ingredients and preparation ... the end result is far better than the easy effort ... I highly recommend this dish ... just watch it ... when it becomes browed and crispy you will be able to 'see' this ...

Fisherman's Quick Fish

This was the most fab recipe ... I used Talapia ... caesar salad dressing from Trader Joe's ... didn't have cheddar so I used smoked gouda ... it was so yummy I can't tell you. And I love how this recipe can be changed depending on what you have in your fridge... this tasted so elegant I would serve to company ... I served in with French Green Beans and mushroom rice ... mine looked exactly like the pic ... I would worry, I must admit, if I used a thicker type of fish such as Halibut ... the thinner Talapia was P E R F E C T and it was perfectly cooked and delicious!!!

Easy Shake and Bake Chicken

The chicken is delicious and moist ... lots of calories ... so don't eat too much ... it smells wonderfully as it is cooking ... I used "I can't believe it's not butter" rather than real butter ... probably as high in calories??? I mixed with just a tat of real butter for flavor ... it is beautiful chicken ... but the cleanup of my pan is going to be difficult ... so be careful and take that into consideration ...

Russell's Fish Stew

I am making this for this evening ... it is cold and rainy here today ... I will serve it with hot bisquits ... however, I intend to prepare it emphasizing the 'stew-like' quality vs. 'soup-like' quality and serve over white rice ... I have miscellaneous small pieces of fish in the freezer ... so I will use them this way and add shrimp ... my mother made something like this ... we loved it ... I will report in tomorrow as to the outcome!! UPDATE ... Okay, I made it!! And it was utterly fantastic ... of course, I made a few slight alterations ... which is not always the best thing to do to a recipe ... but I did ... used a bit of bell pepper, clams in the can vs. clam juice (wanted stew not soup) ... used red vs. white wine ... wanted a richer stew ... used various fish and shrimp vs. white fish ... otherwise, I followed the recipe to a tee ... we absolutedly loved this stew ... it was wonderful ... served over white rice ...

Beef Tenderloin With Roasted Shallots

This was the most fab recipe ... my meat was unbelievably tender ... followed recipe exactly ... if and when I make this again, I will make a change ... firstly ... none if my guests ate the shallots ... so I might change that a bit ... perhaps saute and add to sauce rather than roasting individual large shallots ... secondly, the port make the sauce a bit on the sweet side ... I would use a different wine the next time ... otherwise, I must say, this was d e v i n e l y delicious!! I served with fingerling potatoes and crispy green beans ... preceded by a pear, feta, honey roasted almond green salad ... chocolate cake for dessert ... what a fab meal ... of course, lots of wine and martinis and hor'derves pre dinner ...

Bacon Chicken and Dumplings

HI ... I noticed that some said that they thickened their 'soup' ... mine was so so so thick ... much more like a stew vs. a soup ... my dumplings were very large but were very yummy ... I had to add more broth because it was so overly thick ... the taste was outstanding ...

Easy and Delicious Chicken and Rice Casserole

Okay ... I don't like it when changes are made and then recipe is rated ... however, my c/r casserole turned out so so so fab that I had to tell you how I did it ... Follow the basic recipe Saute green peppers, garlic, and green onions ... add the onion soup (approximately one half) to this mixture ... In the meantime, (I used round covered casserole dish) ... rice in bottom as per receipe ... chicken breasts on top of rice (cut into smaller pieces ... not bite size ... but perhaps four cuts per breast) ... my breasts were previously seasoned because I season my meat and then freeze it ... so my breasts had great flavor ... then condensed chicken soup mixed with chicken broth (not water) as per recipe ... then put on the sauteed veggies ... then frozen green peas on top ... cover and cook for 1-1/2 hours ... uncover and sprinkle on parmesan cheese ... leave uncovered for maybe ten minutes ... THere you are ... what a fantastic dish ... really ... and all was PERFECT ... rice perfectly baked as was the chicken ... moist and delish ... nothing was underdone or overdone and the rice had the most fantastic texture ... nor soggy or sticky at all ... good luck ... I know I improvised, but big wow on how it turned out ...

Easy Baked Chicken Cordon Bleu

ohmygosh ... this is the best recipe ... beyond yummy ... I pounded my chicken breasts ... used string cheese plus a bit of low fat cheddar ... and black forrest ham ... followed recipe as worded ... except, I didn't use all of the butter ... so I poured the rest into the over the chicken ... a bit of the cheese oozed out and into the butter ... which only made the dish all the better because I simply poured this over the top after it was done ... I served with boiled potatoes that are boiled then sauteed until golden and french green beans with arugala (sp?) salad ... omg ... what an amazing meal and I made this for a Monday evening!! It was simply an experiment ... but this dish is definitely company appropriate!! Definitely give it a try ...

Ann's Dirty Rice

Leave out the green bellpeppers and use as a stuffing for bellpeppers ... yummy ... simply make ... stuff bellpeppers ... and bake with a little water/wine in the bottom of the pan ... add grated cheese on top ... or perhaps little pieces of bacon ... serve with a substantial salad ...

Strawberry Muffins

These were so so so yummy ... I followed the recipe exactly; however, I was out of milk so I used some whipped creme (1 cup) mixed with one cup of water ... otherwise, I followed the recipe exactly ... I did sprinkle the top of the muffins with cinnamon mixed with sugar ... I made six large muffins out of the recipe ... oh, I did use maybe 1-1/2 to 2 cups of strawberries ... in any event, they were beautiful, moist, delicious ... hardly bland ... very strawberrieee and yummeee and almost professional looking!!!

Irish Bacon And Cabbage Soup

Yummy recipe ... I followed it to a tee except, I went to Whole Foods ... they didn't have Irish Bacon ... So, I had them slice (rather thickly) their smoked bacon and I simply cut it into large pieces ... I added Basil ... onion powder and garlic salt, regular pepper ... used regular cabbage ... delicious ... of course, I did use more chicken stock than called for ... Very very good ... I served it with Irish Soda Bread with raisins ... Try it on St. Patty's Day!!! Perfect.

Chicken Enchiladas II

Hi ... Okay ... my Enchiladas turned out absolutely fab fab fab ... BUT, I made definite changes ... otherwise, I feel that the recipe would have been too boring ... here's what I did ... firstly, I used Amy's Mushroom soup ... it is semi-condensed ... I purchased it at Whole Foods ... I used an entire can of chopped green peppers ... along with the 'juice' ... I used a small can of sliced olives ... I simply included in with sauce ... I poached the chicken in chicken broth with bay leaves and other spices according to taste ... I sauteed fresh garlic with the green onions ...I added lots of red pepper flakes, and HOT salsa to the sauce ... I used CORN TORTILLAS not flour tortillas (yuck) ... I simply sprayed the bottom of the dish with non-stick spray which worked beautifully ... the corn tortillas turned out soft and fab ... otherwise, I followed the recipe to a tee ... oh ... I didn't add milk at the end because the sauce was thin enough since Amy's mushroom soup is semi-concentrated and more watery than the fully concentrated kind ... otherwise I pretty much followed the recipe to a tee ... I must tell you, the enchiladas were absolutely fab fab fab ... OH ... I forgot, at the end ... after rolling my enchildas and etc., putting on the cheese topping, I put a little hot sauce on the top of the dish ... I know, it sounds like too much hot stuff ... but, trust me, it isn't !!! We had glasses of fab chardonnay (chilled) and toped the enchiladas with fresh green onions and t
