Chicken Sherry
I will not make this dish again. I actually "rinsed" the casserole in the end to salvage the chicken. The mayo and sherry make this a VERY sweet casserole. The mayo is an extremely strong flavor. The Parmesan smells so pungent when you cook it but I knew that it would. I would substitute the mayo for sour cream or non-fat plain Greek yogurt with green chiles but that would make this...ohhh...a completely different recipe.

Mexican Bean Salad
All I need to say is that this is AMAZING. It is labor intensive but worth every minute. I double it. I also use a vegetable chopper that they sell at target called the "Vidalia Chop Wizard". I use it for salsa as well. It is one of my favorite kitchen tools. Makes perfect little squares in 2 different sizes. They have it on amazon.

French Toast Souffle
I really enjoyed this recipe. I took the advice of some other reviews and changed the following. 2 handfuls of brown sugar and one less egg (they were large). I also added cinnamon and fresh blueberries. Raspberries would also be delicious and pretty. When it was done baking I sprinkled it with cinnamon and sugar. Yummy!
