Pork Tenderloin with Dijon Marsala Sauce

Wasn't sure I would like the marsala and dijon...I was SO wrong! This was delicious and restaurant quality. The only changes I made were to use half and half instead of creme and a sprinkle of fresh herbs on top for a splash of color.

Sweet and Tart Strawberry Salad

Make-Ahead Mashed Potatoes

I have been making these for years! This is a wonderful way to prepare ahead for holidays and also makes them easy to take with you and then throw in the oven at your destination. They keep in the fridge for 4 or 5 days.

Almond-Crusted Halibut Crystal Symphony

Oh my gosh, this was wonderful. I used chopped macadamia nuts instead of almonds. With this substitution this dish was upscale restaurant quality and reminded us of one of our favorite dishes in Hawaii.
