Tex-Mex Tilapia

Yum! This was fast, easy and very good. My hubby kept raving. Didn't have fresh jalapenos on hand so I subbed 1 can of Rotel tomatoes with chilis drained and 1 large fresh tomato. It would be even better with all fresh ingredients. Served with cilantro brown rice, white corn and a southwestern salad.

Amazing Pork Tenderloin in the Slow Cooker

Not until I came home and smelled my kitchen did I remember I tried this recipe once before. The ingredients are all tastes I like, but the mix of them is not good. My crock pot was set for 4 hours and my 3 pounds (yes I adjusted amounts) of pork tenderloin was way overcooked and just plain nasty. Tried to save with shredding and bbq sauce

Make-Ahead Mashed Potatoes

I have been making these for years! This is a wonderful way to prepare ahead for holidays and also makes them easy to take with you and then throw in the oven at your destination. They keep in the fridge for 4 or 5 days.

Chicken Florentine Casserole

Very good. Gave it a 4 because I changed a bit from original recipe. Saute spinach and mushroom in small amount of butter. I used 2 pkgs fresh baby spinach. Lightly browned chicken breast tenderloins in olive oil, garlic, and sprinkling of Italian herbs and then placed on top of spinach mixture. Baked at 350 for 25 min and then added 1 cup of mozzarella cheese for 10 more minutes. Would omit bacon next time.

Pork Tenderloin with Dijon Marsala Sauce

Wasn't sure I would like the marsala and dijon...I was SO wrong! This was delicious and restaurant quality. The only changes I made were to use half and half instead of creme and a sprinkle of fresh herbs on top for a splash of color.

Eggplant Casserole

Just OK. Didn't feel it was a good use of my fresh veggies. Only had 1# of ground beef so added a half pound of baby portebella mushrooms. Added some garlic and herbs to the mixture and some parmesan cheese in the topping...still kind of bland.

Round Steak Sauerbraten

Very good. Changed it up and cooked in my slow cooker for 4 hours on low. Used half red wine and half water instead of all water. Aldo didn't have brown gravy mix, so made my own substitute with beef boullion, corn starch and spices. Sauebraten without waiting days!

Mediterranean Tilapia

Very good and nice presentation. I added a light sprinkle of Greek/Mediterranean herbs (from World Market) to fish before baking. Then added topping mixture and a little feta cheese for the last two minutes of cooking time. Could use a little more moisture in the topping to make it a 5 *.

Almond-Crusted Halibut Crystal Symphony

Oh my gosh, this was wonderful. I used chopped macadamia nuts instead of almonds. With this substitution this dish was upscale restaurant quality and reminded us of one of our favorite dishes in Hawaii.
