Chicken Florentine Casserole
This sauce for this recipe has wonderful flavor, which I would liken almost to an alfredo sauce. I subbed 1/2 & 1/2 with whole milk, canned spinach for fresh, and bacon bits for real bacon. I also did not precook the chicken. Instead cooked with the spinach, shrooms, sauce, and raw chicken on 350 for 30 minutes (I had thick breasts) and then added the mozzarella and bacon to cook for about 15 minutes on 400. I served it with brown rice to put a little nutrition as this is not the most nutritious meal you can serve!!
