Cheesy Quinoa Pilaf with Spinach

Fantastic. We used pine nuts and they were good but for the price, we will use sunflower seeds next time. We only had edam cheese in the house and it turned out fantastic. Thanks for a great quinoa recipe!

This was a great recipe to use up our extra fresh spinach from our CSA. We only had sour cream and frozen peas in the house and they worked well. We will make some sticky rice to eat with the leftovers. Thanks for the recipe.

Delicious Pumpkin Bread

Fantastic recipe - so moist! I skipped the walnuts and used pumpkin pie spice instead of cinnamon and nutmeg. I made them this time as muffins - only needed 30 min in the oven. Leftover baked squash works well instead of pumpkin too.

Gorgonzola and Wild Mushroom Risotto

Great recipe. I used what I had around the house so I will share my changes. No truffle oil (wish I would have) and no dried chanterelles. Instead I used portabellas. No gorgonzola cheese or cream but instead goat cheese. I also had some basil I had to use up, which added great flavor. It sounds like a lot of changes but really they are just near substitutions. Oh yeah, if you use homemade chicken stock like I did, make sure you have added enough salt.

Quinoa Chard Pilaf

Good hearty recipe but not enough favor. We added salsa to the leftovers and it really made a difference. Thanks for a recipe that involves quinoa - very under used food.

Stovetop Granola

Fantastic recipe. I also changed a few things in the recipe to cater to my taste. Instead of cinnamon alone like everyone suggested, I used pumpkin pie spice. I used the oven the second time because the product the first time was so chewy and delicious (like a granola bar) it was gone in 24 hours. Next time I am going to try to replace the butter with olive oil to make a lactose-free granola. So easy and addictive!

Roasted Beets 'n' Sweets

Bravo. I agree with a previous review that the beets could be more tender. I'll precook them longer next time. I used butternut squash instead of sweet potatoes because that is what I had on hand from our CSA (community supported agriculture). I would bet some pecan halves mixed in about 15 minutes before it is done would be a great addition, especially for a vegetarian main dish.
