Zucchini Cobbler

Reviewed: Jul. 19, 2010
Amazing! Fooled everyone! There was nothing zucchini-ish about this. Another plus to this recipe is that it used an entire GIANT zucchini perfectly. I seeded the zucc and made 1/4 inch slices - not diced as the recipe says. It even LOOKED like apple slices.

Red, White and Blue Ambrosia

Reviewed: Jun. 9, 2010
I made this last year for 4th of July for a large crowd and everyone loved it>>> and now I have been requested to make it again. The cream mixture is too much for the amount of fruit - I added 2 cans of mandarin oranges, more marshmallows and toasted chopped pecans. (or next time maybe just cut the cream mixture in half?) For 14 people I could have easily cut the whole recipe in half the way I prepared it, but the leftovers held up really well and were wonderful.

Crumb-Topped Rhubarb

Reviewed: May 7, 2010
Perfect As-Is, no changes. (Unless you want to count doubling the recipe and preparing in a 13X9 as a change ). This is going to the top of my list of rhubarb recipes. Easy and DELISH!

Exchange Gang Pasta with Shrimp

Reviewed: May 7, 2010
So good, yet so simple! The only changes I made were based on what I had on hand. Finely diced onion for the shallot, and diced regular slicing tomatoes for the grape tomatoes. Though next time I would give the halved tomatoes a squeeze to remove some of the juice, it was still fabulous... not to mention quick and easy.

Raspberry White Chocolate Mousse

Reviewed: Apr. 18, 2010
The raspberry sauce is too tart as is, so I doubled the sugar. The recipe says nothing about refrigerating it before serving, and I would highly recommend it. If not, it's a little too whipped creamy and less mousse-y - if that makes sense. This is good for a quick and easy dessert option. I originally gave this 3 stars, but after refrigerating for several hours I had to bump it up to a least 4.

Chinese Chicken Salad III

Reviewed: Apr. 17, 2010
I made some changes that made this a 4 star recipe, but it's only 3 as-is. The dressing was entirely too thick and heavy. I added about 1/4 cup of the juice from a can of mandarin oranges. I still didn't like the salad all that much, but when I added the oranges to the salad, that made all the difference. Probably won't be making this again.

Tater Tot Casserole IV

Reviewed: Nov. 5, 2009
This is by no means one of my best meals I make, but I give this 5 stars because it is so easy and family friendly. My kids not only love eating it, they make it themselves. For 32 oz tots, I use 2 lbs ground beef, 2 cans soup, 2 cans green beans, and 2 cups cheese. Mix the meat, soups, and beans together; spread cheese over; top with tots.

Salisbury Steak

Reviewed: Oct. 21, 2009
The family loved this, but because the gravy ingredients didn't look very appealing, I used Serena's advice and made gravy with dry mushroom-onion soup mix. This will go into the regular rotation.

Peach Pie

Reviewed: Sep. 24, 2009
Pretty darn good and so easy to make. Mine came out a little runny, but it didn't detract from the flavor. Warm with a scoop of ice cream, who cares if it's a little runny?

Cheese and Sausage Stuffed Zucchini

Reviewed: Aug. 3, 2009
Sooooo good! Having said that I made some minor changes. I microwaved only 3 minutes, but will go the full 5 next time. I used all of the sausage, which fit nicely into my gigantic zucchini, but prepared only half the cheese mixture. I couldn't have put another spoonful on if I wanted to, so half was the perfect amount. When dinner was over I chopped it all up and ate it casserole-style the next day. Will definitely make this again!

Corn Dogs

Reviewed: Aug. 2, 2009
These were good and surprisingly easy to make! I just dried the hot dogs with a paper towel - no flour or corn starch needed. I believe my oil was a little on the hot side at 375 (I fry everything at 375). They browned too quickly so I will definitely lower it to approx 365 as someone else suggested. Even at 375 they still came out wonderful.

Grilled Corn in Husks

Used the "15 minute Rule" as Debster suggested and it came out wonderfully. In the summer I won't boil corn on the cob again!

Mandarin Chicken Pasta Salad

Reviewed: Jul. 22, 2009
Presentation 5 stars; healthy light summer meal 5 stars; flavor lacking. It wasn't bad by any means, but for all the ingredients and colors I expected a power punch of flavor, and it just didn't deliver. On the other hand, I believe it would have mass appeal for a church supper, pot luck, etc. If I made this again for my family I'd cut the amount of pasta in half to let the colors and flavor shine thru.

Best Tuna Casserole

Reviewed: Jul. 15, 2009
I went into this hesitantly because hubby is no fan of casseroles and my teenage son would run if he heard the word "tuna", so nobody knew 'what' was for dinner. I placed it on the table, served it up, and it was hit with everyone and I know I'll make this again.

Grilled Thai Tenderloin Cutlets

Reviewed: Jul. 13, 2009
Loved it! This will definitely fall into the rotation this summer and prepared again and again. I made only one substitution based on what I had on hand - I used a Thai Red Curry Paste (and slightly less) in place of the Chile Paste. Served with Creamy Dill Cucumbers on the side. Fabulous!

Blueberry Cheesecake Ice Cream

Reviewed: Jul. 4, 2009
O-M-G!!! This is the absolute best most heavenly ice cream that I have ever made and ever eaten. Even my 13 r old said it was better than Coldstone. I used what was on hand - a quart of half & half, 1 cup cream, and 1 cup 2% milk (which I believe is basically 6 cups half and half). I used a can of blueberry pie filling and 1 generic brand graham cracker pie crust. Mmmm...Mmmmm...YUM!
