Mom's Simple Dumplings

I would have given these 3 stars, but I think it just comes down to personal preference. I like my dumplings a little denser, these were a little fluffier (dry) on the inside.

Irish Chicken and Dumplings

Very easy, especially my way. I used a can of peas and a can of sliced carrots and added them at the end. I used a whole skinned and deboned rotisserie chicken, and since I didn't need to cook the chicken in the soup, I simmered the deboned carcass to add some richness to the stew, and added the cooked chicken at the end. I didn't feel the need for 4 potatoes when you have dumplings, and diced only 2. I halved the dumplings, and this was thick and rich and fabulous!

Ethiopian Cabbage Dish

Ethiopian for St. Patrick's Day??? Yep, and it was wonderful with Guinness Corned Beef (on this site). Followed advice of previous reviewers - 1/2 the olive oil and double the spices. I didn't have turmeric and added balsamic vinegar instead - which was so good I added more at the end of cooking. Next time I'll add the potatoes with the carrots and onions.

World's Best Lasagna

This was outstanding, and I will definitely make again! I followed the directions as closely as possible except I cut the salt in half and made 4 layers of noodles and used every lasagna noodle in the box. (15?) It was delicious and by far the most beautiful slices of lasagna I ever served.

Baked Zucchini Chips

Just ran across this recipe and remembered that I made these last summer. I obviously was unimpressed since I had forgotten about them. I will say that if you have more zucchini than you know what to do with and need a change of pace, it's not a bad option - but definitely spice up the bread crumb mixture.

Boudreaux's Zydeco Stomp Gumbo

I chose to make this gumbo first and read the recipe second. If I had read that the roux was made with olive oil I don't think I would've made it, but decided to go with it as per recipe. The roux seemed to just deep-fry my flour until brown, and only tightened up after the broth was added. And a whole cup of olive oil?? No thanks. I cut the flour and oil in half, especially since I of course cut the broth to 3 cans. It was okay, but I wasn't impressed.

Fudgy Chocolate Cream Pie

It wasn't bad, it wasn't great. My pudding came out very very thick, almost too thick. I'd give it 3 stars but my son absolutely loved this so I give it 4.

Passion Bars

A little too sweet/rich for me, but I think most people would like this. I thought the p-nut butter/milk layer was too much. If I make these again I'd either only use half of the mixture or use less p-nut butter.

Garlic-Herb Roast Pork

Wow! I believe it was the cooking method that made this the moistest pork roast I've ever made, and we loved the combination of garlic and herbs. This is now my go-to recipe for pork roast. (used a pork roast vs. pork loin, took 1 hr on 300)

Cranberry Pistachio Biscotti

These were good and easy to make. Though I've personally come to enjoy brick-hard biscotti, I think this will appeal to more people since it is a little softer - dry, but not hard. I left out the salt (since the pistachios were salted) and used margarine in place of the olive oil.

Brownie Biscotti

I used the instruction of another biscotti recipe that says to turn your oven off after the first bake, slice the biscotti, lay them out on the cookie sheet, and put them back in the warm oven. They come out perfect every time without the possibility of burning them. (I usually put them in and forget about them.) I regret that I followed the advice of adding more cocoa, it ended up tasting a little chalky, but I know I'll make these again, they were good. I drizzled melted white chips over them and they were beautiful!

Fantastic Pumpkin Bars

Simply fantastic!! The only change was that I used an 9x13 and baked about 15 minutes longer; otherwise this recipe is perfect as-is. I'll make this again and again.

Mini Meatloaves

I saw this recipe in a magazine almost 10 years ago and it's been a favorite ever since. The only difference is that the version in the mag had onions (can't imagine eating it without). I've never used a full 3/4 c. milk (1/3?) and usually use more ground beef without having to make adjustments to other ingreds. People who say they don't like meatloaf always rave about this one.

The BEST! Made exactly as the recipe states except added more shredded zucchini. Probably closer to 3- 3 1/2 cups. Also, it took closer to an hour to bake fully.

Dark Chocolate Bacon Cupcakes

WOW! HEAVENLY!! I did not process my bacon, just cooked it crisp and crumbled well by hand. There were a few larger pieces, but actually they were wonderful within the cupcake. I'm not a frosting person, almost didn't frost them at all, but went ahead and tried the Rich Chocolate Frosting on this site and that just sent me into Pure Chocolate Bacon BLISS! (for the people who are ending up with dry cake - don't use a mixer, just "stir" as the recipe instructs)

I'd like to say I made this exactly as the recipe states, but I forgot to add the vanilla. Also, I threw it all in the bowl and mixed all at once. Hands down the best chocolate frosting I've ever had.

Quick and Easy Dip

This really is "quick and easy" and I should add - very good! My plan was to make a 7-layer dip, but didn't have all 7 ingredients. This was a perfect alternative! I did add about a tablespoon of taco seasoning to the sour cream.

Creamy Chipotle Chicken

I thought this was super easy to prepare and very tasty. I agree with another reviewer - we had little bits of cream cheese floating in our sauce. It didn't bother me in the least, but it really turned hubby off. I believe that's the only reason he says he didn't like it.

Chiles Rellenos (Stuffed Peppers)

I ended up roasting 3 peppers and not roasting 3 other peppers and put them to the taste test. My family agreed we liked the taste and texture of the peppers that were Not roasted. I like my chile rellenos with cheese only and I knew I wouldn't like mozzarella, so I used montery jack. Good, but I'll continue to search for a better mexican cheese. (but maybe with the meat mixture it works better) I loved the coating - make sure you whip the whites almost stiff. The first few with the stiff egg whites came out much better than the peppers coated with only the frothy egg in the bottom of the bowl. UPDATE: At a restaurant I prefer cheese only, but for this recipe I prefer the ground beef and cheese.
