Authentic French Meringues

I must say that I truly thought this was a flop... at first. I beat and beat and beat and never got the eggs as stiff as I thought they should be. My bowl looked full of a white slimy mess and I expected to have only "meringue puddles" as someone had posted in an earlier review. BUT!! I spooned it into a ziplock bag, snipped a corner, and piped them onto parchment and they surprisingly stood up as they should and came out perfectly! So don't give up too soon... and definitely PIPE the meringues, don't use a spoon.

INCREDIBLE Raspberry Cheesecake Cookies

I found cherry chips at Walmart and decided to do Cherry Cheesecake Cookies. SO good!!! My only mistake was that it didn't look like enough chips. When making chocolate chip cookies if it calls for 2/3 cup it must be better with a full cup, right? Well, not so with cherry chips. I should've stuck with the 2/3 cup because they were a little overpowering. The cheesecake-y cookies were incredible and needed only a few chips in each cookie to make them over the top.

Pumpkin Black Bean Soup

Changes based on what I had on hand: Rotel in place of diced tomatoes, cider vinegar for sherry vinegar (1/2), chicken broth, and no ham. The soup was very bland so I simmered it down for *2 hours* and it came out wonderful. Will definitely use the Rotel again - gave it a nice kick. Update: giving this recipe 5 stars because it became so addictive, I can't wait to make this again!

Chicken and Biscuit Casserole

Good comfort food staple and I like that it's not made with a can of soup. I used a can of buttermilk biscuits, a whole roasted chicken, and my can of peas had mushrooms and onions. Next time would probably reduce the basil or leave it out altogether. Next time will try the biscuits on the bottom as others suggested.

Chicken in Roasted Poblano Sauce

This turned out really really good. When I pureed the sauce in the blender I was very unimpressed, was ready to scour the fridge for a backup plan for dinner, but I found that after you pour it over the chicken, let it mix with the chicken juices and cook down a little, it becomes a totally different animal. :) I did top it with a little cheese and diced fresh tomatoes.

Addictive Sweet Potato Burritos

These were very good and will make them again (especially for the vegetarians who occasionally visit) but I think they needed a little more kick, a little more onion, a little more spice. Maybe even add a little chipotle powder and brown sugar to the sweet potatoes. I halved the recipe and it made a LOT.

Kalua Pig in a Slow Cooker

I used Red Hawaiian Sea Salt on a 2 lb roast. It never dawned on me that a smaller roast needed decreased cooking time - duh! I had it on low for 9 hours and it was a little overcooked. (or could be that my slow cooker runs hot?) Juices? None to speak of so I drizzled a couple of tbs of pineapple juice over it. Nevertheless, this was very very VERY good and I will be making this again.

Marzetti® Hawaiian Slaw

This was okay. I wish I had used slivered almonds instead of sunflower seeds as someone had suggested. Used half cranraisins and half golden raisins - next time will stick only with cranraisins. I also used lite dressing - not bad, not great. Adding mandarin oranges made it all much better. Maybe I'll give it more stars next time I make it with almonds, cranraisins, more mandarin oranges, and regular dressing instead of lite.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

So easy and inexplicably good! I marinated the beef for at least 24 hours and so halved the cayenne to only 1 tsp. Perfect!! Spicy but not too spicy.

Spicy Tortilla Roll-Ups

Used Spinach Herb tortillas, did add a tbs of dry ranch, but it wasn't necessary, used 2 tbs of hot sauce (Franks's) and that seemed like PLENTY, might even go with only 1 tbs next time. Thinner layer is better than thicker layer and I made 4 wraps, sliced in 1 inch spirals can feed a lot. It was pretty but I don't know if they were good enough to make again.

Sausage Stuffed Mushrooms II

So good, so easy! I upped the sausage to 1 lb. for my carnivore husband, but I will try just the 1/2 lb next time. I chopped up the stems and sauteed them with the sausage, and dipped the tops in Italian bread crumbs. Definitely need at least 2 pkgs of mushrooms.

Fresh Asparagus Soup

DELISH! This reminded me of split pea soup without all the starchiness. (hope that doesn't ruin it for anybody! LoL) Based on what I had on hand, I used 1/2 skim milk and 1/2 half&half, and used sour cream for the yogurt. Sooo good. Made this for lunch today and I do believe I will finish the whole pot myself - it's THAT good! (the recipe doesn't say, but definitely cut your asparagus up before putting in the pot)

Oven Chicken Fingers

The changes I made - I used chicken tenderloins, soaked the chicken in buttermilk and hot sauce, and baked at 450 for 15-20 minutes, turning over halfway through. Very very good!

Baked Coconut Shrimp

I love that these are baked, not too terribly sweet, and have a nice spicy kick to them. I almost rated this a 4 because they were not as good as fried, but for baked they are definitely a 5. We didn't even use a dipping sauce and the teenagers devoured them. Using 2 eggs worked just fine, though I think I will try only the whites next time. And the corn starch and coconut amounts were perfect for 1 lb of shrimp - not too little, not too much.

My son made this (with my help) for school. It was easy to make and we used the cookie sheet as suggested in a review. Two mistakes- spead thinner on a cookie sheet, we should have reduced baking time; also, we didn't spread the dough fully so butter pooled in the corners of the pan - and then as the cake baked it pushed the butter out and burned on the bottom of my oven. (smoke alarm!!!) It was very good fresh out of the oven, but very dry by the end of the day. The last line of the recipe says "syrupy" - ours never became syrupy.
