Pretzel Turtles

What a great recipe this is! The most time-consuming step was taking all the wrappers off the Rolos. Didn't have parchment paper, but using butter flavored spray on the cookie sheet worked just fine. Be patient in the cooling time...thought the chocolate would never harden.

Chocolate Brittle Surprise

These are so rich, but SO good! I used one whole sleeve of saltine crackers (37). After I spread the chocolate, I put sliced almonds on half and chopped pecans on the other. Took no time at all, and I know everyone that is getting some of these in their cookie tin are just going to love them!

Ten Minute Enchilada Sauce

This is a great recipe. I used "Fiesta menudo mix" from Kroger instead of chili powder, chopped garlic instead of powder, and chopped onions instead of onion salt. No extra salt needed. Update: Noticed my comments were altered since I mentioned I used this to put into a soup recipe from another website. I realized after my comments were posted that allrecipes has the chicken enchilada soup recipe too (Chicken Enchilada Soup II). Need to try it - fattening but so worth it!

Banana Crumb Muffins

Make sure you have milk in the house if you make these :) I thought the crumb topping made them too sweet, but I'm more of the savory type. Hubby loved them. I made one and a half times the recipe and it made 18 "cupcakes". Also I could have left the recipe as is for the crumb topping since I ended throwing some of it away because it was too much.

Delicious Egg Salad for Sandwiches

Pretty good. My usual way of making egg salad is with mayo, salt, pepper, onion powder and garlic powder. The green onions were a good addition, but you really couldn't taste the paprika and mustard.

Quick Quiche

I put everything in a rectangular Pyrex dish last night and plopped it in the oven this morning. It took about an hour to bake since it was in the fridge all night. I had about 2/3 of a pound of bacon that I cooked and crumbled used shredded cheddar and freshly grated parmesan. Stirred everything up and put more of both cheeses on the top about 10 minutes before it was done. It turned out delicious if I do say so myself!!!

Spinach Brownies

Didn't have mozarella cheese, so I added about 1/3 cup Kraft parmesan and 1/2 cup freshly grated. Also added a minced garlic clove and sprinkled extra garlic powder, onion powder and pepper. Only put about 1/2 cup of fresh onion since I already had it chopped up in the fridge. Put it in a Pyrex dish that wasn't quite 9"x13". Received numerous compliments from both BIL and hubby!

Delicious Pumpkin Bread

Good recipe...put 1/2 cup oil and pureed 3/4 of an Asian pear to make up the other 1/2 cup. Canned pumpkin was 15 ounces so I put about 1/2 cup of sour cream too. Very moist.

Absolutely Fabulous Greek/House Dressing

This is a great recipe. I only added a half of a clove of fresh garlic to keep the vampires away. Also did an Italian version for yesterday's potluck using Italian seasoning in place of the oregano. Used Romaine and green leaf lettuce, tomatoes, cucumbers, green/red/orange bell pepper, red onion and lots of shredded parmesan cheese. Greek version is the same minus the parmesan and add feta cheese and sliced olives.

Jalapeno Poppers of Champions

I've made these four times now and use Philadephia cream cheese with chives. I also use regular bacon and just cut a slice into thirds and place it directly on top of the cream cheese filled jalapenos - a whole lot easier than wrapping them around each half and having to use a toothpick, You can also crank up the oven to 400.

Creamy Rice Pudding

I write reviews so they'll be at my fingertips when I look at my "Recipe Box"; that way I won't let a great recipe slip away. This one is a definitely a keeper good way to use leftover rice. The only thing I did different was add a little cinnamon.

Asian Coleslaw

This was really a delicious salad/slaw. I just cut up a small head of green cabbage; toasted some sliced almonds with a pat of butter; added about half a can of chow mein rice noodles and cut up a half a grilled chicken breast into pieces. Didn't add bell peppers, carrots or cilalntro. I only used half of the ingredients listed for the dressing (with only one tablespoon of ginger and one large clove of minced garlic). I also added about a quarter cup of water as it appeared a little thick. A teaspoon of sesame oil is what put it over the top!

Delicious Ham and Potato Soup

All I could hear was Mmmmm Mmmmm Mmmmm from my husband the whole time he was eating this! Didn't add the extra salt...bouillon and ham have so much sodium as it is.

Southwestern Egg Rolls

Had a few people over these went great with my Mexican theme of skewered beef fajitas, jalapeno poppers and salsa and chips. Made mojitos magarita style (crushed ice). Only 8 people and everything disappeared (I even doubled this egg roll recipe). For the dip, I just bought a bottle of Hidden Valley Ranch buttermilk dressing and put in some chopped red and green bell peppers just to make it pretty.

Spicy Bean Salsa

People at work loved this. Instead of Italian dressing I add a clove of minced garlic, the juice of one lime and a handful of cilantro, chopped - doesn't need all the added fat you get when you add oil contained in Italian dressing.

Holiday Chicken Salad

I made this last night for lunch today - I can't wait! Used two chicken breasts with red onion instead of green. Also followed other reviewer's instructions and added half plain yogurt and half light mayo to ease the guilt a little. Very pleased with the result. Will keep this in my file of favorite recipes :)

Roquefort Pear Salad

I've made this salad several times and receive compliments every time I make it. I've used blue cheese, Roquefort, and Gorgonzola, but have found Gorgonzola to be the best. Follow the rest or the recipe to the "T" and it is D-E-L-I-C-I-O-U-S!
