Curry Pasta Salad

This is a good tasting dish that can easily be made into a complete meal. I did make some substitutions because I didn't have some ingredients on hand though. I added more 'sauce' by putting in more curry and mayo and added some EVOO for liquid with the lemon juice. I also ommitted the tofu but added some diced ham. Hubby, a big curry fan, had two helpings so it passed the test!

Slow Cooker Chicken and Dumplings

This recipe was beyond easy and my husband, who really likes chicken and dumplings, raved about it-which is unheard of in our house since he's an 'eat to live' kind of guy and doesn't get excited about food often. I have never had chicken and dumplings before, so I can't comment on how these stack up to homemade; I can only say that they were good. I stuck to the recipe exactly except that I only used one can of biscuits and used chicken broth instead of water.

Slow Cooker Chicken Alfredo

We did not like this. The chicken came out very moist and had good flavor, but that's the only saving grace the meal. It's basically just store bought sauce that you cook for a long time, though it would taste the same if all you did was put it in the microwave and then melted some cheese into it. We won't make it again.

Orange Curried Chicken

This was a good recipe. Nothing extraordinary but still tasty. I used boneless, skinless chicken breast-cut into chunks and also added one Tbs of soy sauce. I chose to use the 'low sugar' orange marmalade to cut the sweetness.

Cinnamon and Lime Chicken Fajitas

I thought this was very good. I made the recipe exactly as stated, except i used country style hashbrowns and lime juice rather than a juiced lime. My chicken was extremely moist as well so i did not need to add any broth. Good flavors and pretty simple.

Steak Pie

I loved this recipe. It tasted awesome and was really easy to make. The only changes i made was to use two ready made pie crusts instead of the puff pastry and i added some potatoes to the meat/gravy mixture. Wonderful!

Homemade Chicken Fettuccine

This was not my favorite alfredo recipe. It's not that it's bad, it's just that i've had other alfredo dishes that were much better. It's very edible and the chicken does have a good flavor. I didn't like how thick the sauce turned out, but i think i cooked it a bit too long. The sauce will continue to thicken after you shut off the heat and i forgot that. It made the finished product very dry and goopy, rather than creamy with not enough sauce to go around, even though i increased the cream to 2 cups. Hubby didn't like the mushrooms, but i thought they had a good flavor. I probably won't make this again.

Easy Honey Mustard Mozzarella Chicken

This was a good, easy chicken dish. My husband, who doesn't like mustard, even said it was really good. The only change i made was to use prepared honey mustard sauce for convenience.

Maria's Rice

This was a very flavorful, easy side dish. I was in a rush to find a side dish that i also had all the ingredients to and this fit the bill perfectly. The only changes i made was to use about 1 and 3/4 cup instant rice (what i had on hand-which cut the cooking time down to thirty minutes-covered), onion soup mix instead of the creamed kind (added one cup extra water) and only 1/4 cup of butter. It turned out great.

This was excellent. The only changes i made was in leaving out the tomatoes because no one in my family likes them. It tastes so good and even my hard to wow husband commented on how good it was.

Beef Noodle Soup

I thought this was a great recipe. I'm always looking for good soup recipes but my family is pretty picky so it's a hunt to find ones that will work for us. This recipe was perfect because i could alter to fit our tastes. I also took others' advice and added a cup more water, onion soup mix and 1/4 c. flour to thicken.

Greeked Zucchini

Amy's Spicy Beans and Rice

It was very easy to make and smelled really great while it was cooking, but i thought the end affect lacked flavor. It was spicy but that was all we pretty much tasted. Overall, i liked it as a side dish (ala' red beans and rice style) but not as the main course.
