Baked Kale Chips

This is a very easy recipe. Mine came out perfect, not burnt, at 15 minutes. I ate a ton of them and now I don't think I ever want to see another kale chip again....at least not for awhile. My hubby did not care for them at all, but that's just him. I will say don't use alot of oil, don't let them burn, eat warm, they aren't as good when they sit, and don't overdo it like I did. Thanks for a great recipe.

Zucchini and Potato Bake

Mascarpone Strawberry Cupcakes

Wasn't sure about these at first..they are sooo moist they almost taste how should I say? Un-done, raw?? But they browned lightly and passed the toothpick test, and look cooked in the middle. Nice crumb. Literally melt in your mouth. Hubby liked them. They are better the next day. I have not iced them yet...not sure what would be best on top. They almost don't need anything on top. Powdered sugar? Just a fresh berry? Not sure. Would make these again.

Grandmother's Buttermilk Cornbread

Great recipe. Just sweet enough. Only issue I found with this recipe is that when I added the eggs I had to whisk or mix quickly because my butter/sugar was a bit hot, and the eggs can scramble. So melt butter slowly on low heat or prepare to work fast! Thanks for this recipe. Definite keeper.

Turkey Veggie Meatloaf Cups

I made this recipe exactly as stated, except all I added was about a Tbsp.fresh chopped parsley. This recipe needs some salt & spices. I thought the Worcestershire would be enough but it was bland. I found that after eating the top w/the bbq sauce, the rest was plain and bland. I couldn't finish eating it. I could not taste the Dijon at all. It has a nice texture from the couscous & veggies, just not enough flavor. The recipe has potential, it just needs some zing added to it. Sadly, we ended up throwing these away. Hubby did not want more than 2 bites. Sorry.

French Veggie Loaf

This is great! I substituted a small onion for the shallot, and I also added some chives. My batter was quite thick. I brushed the top with butter the last few minutes of baking. Tastes delish. Would probably be good with different cheeses, but I used a good, strong Swiss, and it was fantastic. Thanks!

Maple Cajun Mahi Mahi

This was so easy! I rarely make fish, because it's often hard to find fresh fish here, and frankly I never know what to do with it. This was great. I used Tony Cachere's cajun seasoning, and pure maple of course. Simple & delicious. Thanks for a great recipe.

Sweet Short Pastry

Great recipe. Wasn't sure about the vanilla, had never heard of it in pie crust before, but it was fine. This rolled out nicely between wax paper. I made it into 4 large cherry-filled turnovers, baked at 425 for 35 min. Golden, beautiful, sweet enough, flaky! Went well with the cherry. Thanks!

Double Layer Chocolate Peanut Butter Pie

This pie was awesome! I used low-fat cream cheese. I also used whole milk which I think makes the pudding layer just divine. I chopped the peanut butter cups small and sprinkled on top for garnish. It was a big hit as the dessert for a pizza party we attended. Thanks so much. This one is a keeper.

Quick and Easy Pizza Crust

This was easy & delish. I used all purpose flour. I have a smaller sized round pizza pan, (? not a 12 in. pan I don't think) so it came out thicker, so I pre-baked it for 5 min. then topped it before baking another 15 min. or so. I could have easily gotten 2 thin crusts out of it. This will be great for free-form pizzas on the grill come summertime. thanx chef rider!

Apple Cake III

this was ok. it definitely needs more apple. i left out the brown sugar in the topping then found it needed something, so i did a drizzle of glaze (the basic powdered sugar, milk, butter stuff). this helped. made it more of a coffee cake.

Baked Potato Casserole

This turned out great and made a big batch. Everyone loved it. I used 3 pkgs. of real bacon bits instead of the pound of bacon, and I used a mix of idaho potatoes and white potatoes, some w/ skins left on, some peeled. Will definitely make again. thnx!
