Farro Salad with Asparagus and Parmesan

I never tried farro before but this recipe was great! I used lemon juice instead of balsamic vinegar, decreased the amount of Parmesan cheese, and left out the chives because I didn't feel like buying it. The recipe was really easy and makes a good amount, so I can take it for lunches this week at work. I'm so glad I found it!

Collard Greens and Beans

I love this recipe! I'm from the South and I'm a little picky about my collard greens, and this recipe is wonderful! There are so many tasty flavors involved. I sometimes add chicken sausage to this when it's done and eat it as a whole meal.

Pasta Primavera with Italian Turkey Sausage

This was one of the best things I've ever made! I was a little skeptical of the lack of other spices but just the fresh basil and red chili flakes were amazing! I'll definitely be making it again. I was looking for a pasta dish with lots of vegetables and a very light sauce, and this was perfect! It's good with or without the sausage!

Soft Oatmeal Cookies

These cookies are so amazing! Mine turned out kind of spherical because I didn't smush them down. I added cranberries and chopped pecans, and they're really great! I'll definitely be making these again, with different additions. I'm thinking about chopped coconut next time...

Pumpkin Soup

Wonderful soup! I only had enough pumpkin for one serving, and it cooked so thick during the first 30 minutes that I didn't cook it again after blending. I also added whole milk instead of cream. It's one of the best things I've made! It's very creamy and thick.

Easy Chinese Corn Soup

When I read the recipe and the reviews, I thought wow! It's amazing that a can of creamed corn and some chicken broth can taste good like real soup! But it doesn't. It tastes like a can of creamed corn made all soupy. It wasn't bad, I ate it happily, but I won't be making it again. It's not like a Chinese soup at all.

Cottage Cheese Perogies

This batch of perogies is possibly the most wonderful food I've ever made by myself. I gave it a 4-star rating because it needs some adjustments to get it that way. After reading another review, I made this batch half boiled and half pan fried to test it out. It's true, the boiled ones turned to soup and were edible but not that tasty. The fried ones are amazing though! I added pepper, italian seasonings and parmesan cheese to the filling and panfried them in olive oil for a few minutes. They broke but still turned out really wonderfully. Pan-frying in olive oil made them really crispy and fluffy but not too oily. They still had a little floury feel on the outside too. I highly recommend frying instead of boiling. I've never had perogies before! Thanks so much for this recipe!
