Garbanzo Bean Chocolate Cake (Gluten Free!)

I made this without anyone seeing that there was garbanzo beans in it. The kids didn't notice any difference, but my husband thought the consistency was a little weird. It is moist, and sweet, and definitely a keeper for a gluten-free chocolatey treat!

Turkey and Quinoa Meatloaf

Wonderful flavor! The only thing I was disappointed with was that the quinoa didn't cook completely in the top half of the loaf. It wasn't fully cooked after cooking til the water was gone, as the recipe stated, but I figured since it still had 50 minutes to cook that there was a reason. SO, my recommendation is to make sure the quinoa is fully cooked before adding to the turkey mixture. Then it would be PERFECT!

Venison Pot Roast

As far as seasonings, this was great. I made a decent sized roast (Probably 6 lbs) and let it cook for the specified times - but it turned out dry an quite overdone. I'll take that into consideration next time, and maybe only cook for 2 hours. The gravy was pretty sweet.

Crumb-Coated Chicken Thighs

Delicious, easy to make, and fast. My husband and kids thought it was the best chicken I'd ever made, and there was talk at the dinner table of me being the best cook they had ever met. Haha. Guess I'll be making this again soon...

Creamy Chicken Asparagus Casserole

I have to say I'm a little surprised by the 1-stars after this dish. I did make some changes, (seasoned chicken w/ garlic powder and Pappy's seasoning salt prior to browning, added sour cream to the soup mix along with water to thin it a little.) and did top w/almonds. My husband said it was awesome. Actually his exact words were, "This is delicious. Worthy of (insert local 5-star restaurant)." I thought the asparagus was overdone too, probably wouldn't allow it to cook as long with the onions next time...or not at all? Even so, I'm filing it in the 'favorites!'

Quinoa and Black Beans

This was my first time cooking/eating quinoa. My family and I thought this was a great recipe! Our vegitarian neighbors gave it 5 stars also. I did add a can of diced tomatoes and a can of mild green chilis - I think it would have lacked flavor otherwise. But it turned out excellent! This will definitely be on our meal plan in the future. Cheap and easy to make.

Homemade Angel Food Cake

I made this cake for my daughter's 1st birthday today. It raised alot more than I expected it to, but was delicious, moist, and very fluffy. I forgot to put the vanilla in...oops...and put a little less confectioners sugar in, but the sugared strawberry topping I made to go along with it made up for it. This is the first angel food cake I have made that turned out this good and didn't fall! Very easy recipe!
