Banana Cake VI

Thank you Cindy! This is a great cake! I followed the recipe to the letter and it was fantastic! My husband declared it was one of the best things I had ever made. Another reviewer called this "country good" and I couldn't agree more. It reminds me of one of grandma's old recipes passed down for generations. After frosting the cake, I did garnish with toasted walnuts which gave it an extra kick in my opinion.

I HAVE TO BE HONEST HERE. I WASN'T A BANANA LOVER, BUT I AM CRAZY ABOUT THIS RECIPE!! IT IS GREAT AND LOOKS FABULOUS SERVED IN MARTINI GLASSES. YOUR FAMILY AND FRIEND WILL BE IMPRESSED!

Whipping Cream Pound Cake

This is my favorite pound cake so far! I did make a few modifications to maximize the flavor of the pound cake. I did use the almond flavoring and I doubled the vanilla flavoring. Also, I didn't have "cake flour" so I just double sifted all purpose flour and used 2.5 cups instead of 3 cups. Also for added flavor I did a basic rum glaze (water, sugar, butter, and rum flavoring). I poked tiny holes in the pound cake (with a toothpick) before pouring the glaze over the cake so the flavor would really "sink in." The end result was a very moist, flavorful pound cake. I will definitely be making one of these again and very soon! Happy Baking!

Rich Chocolate Frosting

This is a great frosting!I used Hershey's Dark Chocolate Cocoa to make it even richer. This goes well with David's Yellow Cake (also on allrecipes.com), but I have to tell you. The frosting makes the cake. You will be glad you tried it!!

Eggplant Parmesan II

This is absolutely decadent. It reminds me of an eggplant parmesan I had in a 5 star Italian restaurant in Highlands, NC. I would suggest cutting back to 4 cups of spaghetti sauce and if you like garlic, add it!! You also can get by using just 2 medium-sized eggplants (and leave the peel on, it gives it a much better texture). I also used fresh basil which I believe makes a difference. This really is an easy, impressive dish! Will definitely make again and soon!

Grandma's Egg Custard Pie

This is excellent and so easy! I used the pre-made pie shell (I recommend Marie Callender-you can get these in the frozen food section of almost any grocery store)I also added an extra 1/4 tsp of vanilla. Scrumptious!!!

French Toast Fingers

These are great and so easy to make!!! One suggestion: Try these with Nutella (it's a chocolate (hazelnut) spread that can be found by the peanut butter in your grocery store.)The strawberry preserves are good, but the Nutella -out of this world!!!!!

Baked French Toast

This is fabulous!! I recently cooked this for my family when we were on vacation. It was a hit!! I used 1 cup of milk (instead of the suggested 2 cups) and 6 eggs (instead of the suggested 8 eggs). You cannot go wrong with this recipe! One user suggested putting pecans on top. While I didn't do this, I will definitely try it with the pecans next time. A real winner!!!!
