Chef John's Macaroni and Cheese
I have made this at least 5 times over the last year, but didn't want to review until I had nailed down my suggestions. I love how easy this is--totally do-able on a weeknight. I use less milk (2c), skip the thyme (I hate thyme), use velveeta mixed with whatever other cheese we have (fontina and jarlsberg tonight), and reduce the salt. I also increase the mustard to 2tsp and use dijon. Not low calorie, but easy and family friendly.

Chocolate Fudge Pops
These are delicious, but I agree with other reviews that you should just follow the directions on the pudding box (2 cups milk, no added sugar). Adding 1 cup of Cool Whip makes them less dense and hard. Yum!

Honey Mustard Chicken with Pretzel Crust
I didn't love this. Despite following the recipe exactly and baking in a convection oven, the crust was not crunchy. You will need to double the marinade--there is not nearly enough for 4 chicken breast halves. I also think you could cut the mayo to 1 or 2 tablespoons for the dipping sauce.
