My husband and I love Orange Roughy, but this recipe was a bit sour. Normally I put lime in just about every fish recipe, but I think the OJ and lime was a little too much. However, we ate the finished meal and won't be turned away!

Stuffed Eggplant with Shrimp and Basil

This is a great recipe for eggplant. I followed the recipe to a "T", and was pleasantly surprised. The bread crumbs and cheese give the mix a stuffing taste, but I love it! I served this with parmesan couscous; a great partner!

Too Much Chocolate Cake

This was the BEST chocolate cake. I always try to make the recipe as is, but I love to alter a bit. The only thing I did different was using chocolate chunks, rather than chips. They kept there shape after baking, and it was a nice to bit into a chocolate chunk!

Mom's Baked Beans II

These are the easist, yummiest beans I have ever made. My dad swears he has the best recipe, but I think once he trys these he'll change his mind! I always leave out the tomatoes, and sometimes use bacon pieces (not bits) instead of slices. This recipe is a family favorite!

Chicken Flautas

This may be a good recipe, however, flautas are made with flour tortillas. Taquitos are made with corn tortillas. Just so everyone is clear, these are not "authentic". Still good though.
