Baked Spinach

I followed the directions of Rivertownmom, and thanks! It was pretty good. I did pretty much what she did except I didn't have garlic.. had leeks instead of an onion and my cheese was extra sharp, but it was pretty much the same. I liked it, no complaints, I mean its egg and spinach so you definitely taste both but I really liked the topping, I added some of my chedder on top and parm w/ the bread crumbs.

Pan Fried Daikon Cake

Just made this and I liked it a lot. Kind of tastes like an eggroll crab cake..without the crab. We got the large radish in our CSA and so I was happy to be able to find something tasty to do with it. I'm actually excited we didn't use it all up. All I did different was use leeks instead of red onion, because that's what I had and I tried to make some kind of chili garlic sauce with hot sauce and soyaki(trader joes marinade) Anyways, pretty much did the recipe, was good!

Beet Bundt Cake

I'm giving this recipe a 5 because honestly it was delicious! As I was cooking the beets for this I realized even more just how much I really hate the smell of them and the thought of eating them. You really cannot taste the beets in this. Even my little niece/nephew just ate it like regular cake. The onlyyy thing I did different than the exact recipe was add a couple tablespoons cocoa powder as suggested by other people. There's a lot of butter in here so next time i'll see if I can do something about it. But if you have beets and don't want them this is a great way to use them.

Sweet and Spicy Sweet Potatoes

This is not even out of the oven and I know its good from tasting it! Although I should be honest, I used the recipe as an "idea" didn't measure anything and used what I had, which was pretty much the same flavors the recipe called for. I'm still giving it a five because I didn't go completely opposite of the recipe or anything. Thanks for a good idea! This super large sweet potato has been on the table for a month!

Rivel Soup

I just made this tonight. I had no idea what to expect, but I followed some advice from some of the reviews. I also added onions/carrots/garlic/fresh farmers market corn, put as much stock in as I had, I didn't measure, it was homemade, probably about two spaghetti sauce jar's worth, plus another of water. I also used the 2 eggs. I really thought it was very good, but next time I will probably cut the rivels in half, I don't think it needed that much. Also, I really don't think that picture is an accurate description of the soup because I at least doubled the liquid and right now mine looks like a rivel stew. But tasty.

Blueberry Zucchini Bread

Really enjoyed this bread/cake! Just made it tonight. I pretty much followed the recipe except I didn't have cinnnimon so I threw in a bit of honey, didn't have quite enough blueberries so I also cut up some cherries, and I used half whole wheat flour. I would have also used the applesauce as many recommended but I didn't have any so I used the full cup oil. Also I used 2 cups sugar. Oh and I made a crumble as many others did with what I had, almonds, sunflower seeds, oats, and the usuals. Very good !!

Baked Potato Soup

I pretty much followed this recipe exactly, I used a touch less salt, a touch less basil, added at the end green onion and bit of sourcream with the cheese and bacon garnish. Tasted like restaurant quality soup!

Artichoke Chicken

This recipe was really easy and very good. Great recipe to serve to guests as it can look fancier than it is. I actually did half artichoke hearts and half broccoli tops. I added black pepper and garlic powder and shook bread crumbs on top which I thought added color and tasted good. Also, I did the half sour cream and half mayonaise. I did have a lot of liquid around the whole thing in the pan, but I just lifted everything minus the liquid and served it on a plate. Very good! Thank you for the recipe.
