Sauerbraten IV

Reviewed: Jan. 11, 2008
This was a very good recipe. I did read the reviews prior to making this recipe, one person said it had a heavy vinegar taste and it did after cooking it for the suggested amount of time therefore I added salt and another 30 minutes to the cook time and it was great.

Creamy Hot Cocoa

Reviewed: Oct. 14, 2009
WOW!!!! Good bye Swiss Miss, and HELLO to this recipe. I did follow some advise. I did cut the sugar to a little less than 1/2 cup and I used Ghiardelli unsweetened cocoa. Once you try Ghiardelli, its tough to use anything else, I even use it for my Brownie mix. I doubt I will ever buy packets again. Thanks for this fabulous recipe!!!!

French Onion Soup I

Reviewed: Jan. 5, 2008
Great recipe, I followed most of the recipe as well as advise from prior reviews. I did add a small amount of Wostershire , and I did change the cheese to Guyere cheese. The only thing I might do differntly next time is add a LITTLE less red wine, somewhere in between 1/2 and 3/4 cup.

Marinated Flank Steak

This was a great marinade, I have made it twice and I think marinating it overnight is the better way to go.

Carrot Cake III

Reviewed: Apr. 3, 2009
WOW WOW WOW This was fantastic, once I followed the most suggested of reviews, I used 3/4 cup oil, and 1/2 c. applesauce, Increased the amounts of vanilla and cinnamon by one tsp.I also used 1/2 brown sugar and 1/2 white. For the frosting, 3c. of powdered sugar was fine for my liking. I tested this recipe today to make for Easter and I am SURE that it will be a hit. Oh, also I used 2-9inch cake rounds and the cake was done in just under 40 minutes ( about 37 )

Parmesan Spinach Balls

Reviewed: Jan. 28, 2008
These were excellent. I wanted to try this before superbowl sunday. I took the advice from other reviews, and sauteed the scallions along with minced garlic in the butter. The garlic was a BIG plus to this recipe. Next time I will add less bread crumbs. Also, do NOT make the mistake of overcooking these. I took the out after 15 minutes, they were perfect, I then kept them on warm in the oven and they became too hard and not as good.

Zucchini Bread IV

Reviewed: Aug. 15, 2010
This recipe is fantastic. I did follow the review from MaryKlaire and added one more cup of zucchini, and I did NOT drain the zucchini. It did take 70 minutes on 325 F. I made one loaf with the crumb topping from MaryKlaire and one without . The crumb recipe , I did not add as much sugar. For one loaf I used 1/4 c. This is a MUST TRY RECIPE!!!!!!!!!!!!!!

Barbecued Beef

Reviewed: Sep. 4, 2011
Got great reviews on this recipe , made it for 30 people, no leftovers. I will say that I went to my butcher for a trimmed chuck roast. ( I needed 8 lbs )I seared ALL sides with a generous amount of salt pepper and garlic powder . After many hours on the slow cooker ( 12 for this size ) I placed most of the sauce in a container in the freezer to skim off the fat , if you get the chuck roast that is alot of fat. So this is a must in the taste. There was not one person who did not compliment me this holiday weekend, and there were lots of cooks, this recipe stood out. BTW it took an hour to shred the beef and get rid of lots of fat in the chuck roast but it did not shrink much as I anticipated in the slow cooker.

Rempel Family Meatloaf

Reviewed: Mar. 24, 2008
I have to say this recipe was very good. I made a 4 lb meatloaf and there were no leftovers ( 5 people ). I did follow a few suggestions from other reviewers. I used the 2 complete packs of onion soup mix I did not sift out the powder but remember I made 4 lbs so with this much meat it was not salty at all. I definately lined the pan with bread. It made clean up quick and easy. I also used the glaze of ketchup, honey and wostershire which was a perfect glaze to this meatloaf. Next time I make this recipe, I will use 1 less egg. I found the mixture way too soft and had to add more ritz crackers. Everyone loved this recipe and I WILL do this again. Thanks for this great recipe.

Stuffed Green Peppers I

Reviewed: May 28, 2010
I made some changes, I used ground beef and sausage, I also used the creamy tomato soup in the sauce as well as the gravy on top ( Which it needed lots of) I added onion and garlic cooked seperately and rice also cooked alone and tasted the mix before placed inside the peppers. I made adjustments at this point, ( more salt pepper, a touch of red pepper flakes) If the mix tastes good go ahead. This is when I added the Creamy tomato soup. Both to the mix and on top of the peppers. The important part to this recipe is to only boil the peppers 5 minutes or else it will break apart if overcooked. Also once the cheese is on , undo the foil for 10 minutes prior to eating it. Otherwise this recipe was awesome.

Split Pea Soup

Very good for first attempt at split pea soup. I will definately do this again. The only difference is that I added one bay leaf as I normally do with all my soups, and used college inn chicken broth instead of water.

Pork Tenderloin in Bourbon

Reviewed: Oct. 17, 2008
I followed the suggestion from a few people, first, I did not have Bourbon, so I substitued balsamic vinegar, it was GREAT!!!!!! I did cook it longer than indicated. 45 minutes was was too short for these tenderloin pieces. I cooked it at 325 for 1 and a half hours for 2 and 1/4 tenderloin.

Pennsylvania Coal Region Barbecue

Reviewed: Mar. 14, 2009
This is a great alternative to purchasing those overpriced sloppy joe packets, especially when most households have most of these ingredients in the house anyway. I did add more brown sugar, and ketchup. The good thing about this recipe is that you can add more ingredients if needed once you taste it, and customize it. I think I have seen the last time that I purchase the packets, Thanks!!

Zucchini Patties

Reviewed: Oct. 15, 2012
This was a good recipe after some modifications, first off the consistency was very very watery, next time I will drain the zucchini first. Because it was so watery, I used bread crumbs to help it along I tested one pattie before cooking the others and like other reviewers said it was bland so I added additional salt, black pepper, fresh garlic and some chipotle pepper for an additional little kick. They were much better.
