Chocolate Chip Banana Muffins

I substituted Brown Cow cherry vanilla yogurt as it was all I had onhand; should have adjusted the sugar accordingly as these turned out very, very sweet. My fault, not the recipe's! These are easy and good.

To Die For Blueberry Muffins

Made these as mini muffins for portion control and to suit smaller children who could not/should not eat a giant muffin. I doubled the recipe using ingredients exactly as written, yielding 40 mini muffins. I filled each cup almost to the top (approximately 1 heaping spoonful per mini muffin cup) and topped each with 1 tsp. of crumb topping. I had lots of extra crumb topping left over, so will not double that portion of the recipe next time. I used a dark, non-stick mini muffin pan and baked for 15-18 minutes at 400 degrees. The muffins turned out beautifully, with nice rounded tops and golden brown edges. Texture was perfect, with just the right balance between sweet muffin and tangy blueberries. These got rave reviews from everyone who tried them!

Roasted Chicken Noodle Soup

Soup had a good flavor overall, but would not use potatoes again as they made the soup taste kind of starchy. In addition, the yolk-free noodles had an odd flavor & texture. Loved the creamy broth, though! Thanks for the recipe!

Chicken Tortilla Soup V

Fabulous, fun, and easy soup! Leftovers were even better! Used low sodium broth and did not miss the extra salt, as the chips provided plenty. This soup would also be good without the chips & cheese as a healthy lunch or side dish option.

Tropical Tuna Melts

Quick, easy, and pleased the whole family! I used well-drained crushed pineapple & french bread because that is what I had on-hand. Worked great, and will use english muffins as suggested next time. Start to finish, less than ten minutes to prepare & serve, and very economical, too!

Chocolate Mint Candies Cookies

Wow - AMAZING cookies! They have a chewy texture and get better and better over the course of a few days. I made slightly larger cookies than suggested and topped with one Andes mint each. Do not be intimidated by the multiple steps of this recipes or the many "tips you must follow to get it right" listed in the reviews. They are great tips, but just relax and play around with these cookies - you'll do fine! I have eight and twelve year olds who can now make them independently and who had a blast making lots of batches to give holiday gifts.

Mini Cheesecakes I

I followed the recipe exactly, using room temp cream cheese. My batter never really appeared "light and fluffy", even with the Kitchen Aide mixer, but there were no problems with lumps. I baked them for about 12 minutes, then turned off the oven and let them rest for 10 minutes before removing from oven. I did not do a water bath because of the size of my muffin tin. Cakes were lightly browned and did not crack. The vanilla wafer crumbs worked fine, too. The cakes came out of the wrappers without much mess and the crust held together. I made 48 mini muffin-sized cakes and had a very little bit of batter left over. I topped half with cherry pie filling and half with sugared pecans (1/2 C. chopped pecans, 1/2 C. brown sugar, 2 Tbsp. of butter, heated in skillet 'til sugar is dissolved) and chocolate chips. They turned out very pretty and were popular at a party, but I just didn't care for the taste. They reminded me of cheap, storebought cheesecake - sweet, but just not rich enough. They also seemed a little "egg-y" for my tastes, and the crust and cherry topping seemed to overpower the tiny bite of cheesecake. Like many sugar cookie recipes, these seem to be more for creating a pretty, decorative final product than for creating something you would really enjoy eating. They are visually appealing and fun to make, so I would possibly suggest them for large parties, catering events, etc. They might also be a good treat for children to help make and take to school for a party.

Very good - we'll be making this one again! I used flour tortillas and seasoned the ground beef while cooking, but otherwise followed the recipe exactly. It was quick, easy, appealing-looking, and tasty. My husband prefers spicier foods and topped his with hot sauce; those seeking to feed a spice-loving crowd could season the meat with a little taco seasoning and use hot enchilada sauce and pepper jack cheese, with pico or hot salsa to top. I liked it just fine as written, though; it was not bland. It seems like an affordable, use-what-you-have-onhand kind of recipe, and is going to become comfort food in our house!

Raspberry Brownies

Brownies turned out overly sweet, with an odd texture; not especially appealing. The freezing and thawing process went pretty smoothly, and the baking time seemed accurate, but the finished brownies do not look like the picture at all. They are a typical dark brown brownie, so, instead of having an obvious layer of raspberry in the middle, they just appear gooey and underdone. The raspberry flavor was nice, though. I might try this process again with a better brownie recipe. As written, these were nothing special and I would not serve them to guests.
