Modern Pasta e Fagioli

This is so to-die-for! I subbed frozen spinach. Also added italian seasoning since I didn't have italian-style diced tomatoes. Didn't use as much broth as called for so it was thicker. Mmmmm...this is going to be a regular go-to dish. So easy.

Cheesy Baked Eggs

I love this! Never would have thought to combine cottage cheese and eggs. Eggs are good for you. Cottage cheese is packed with protein.

Brownie Biscotti

Love these! I subbed veg oil for butter as one reviewer said it helped the crumbling issue. Omitted chips since some said they are harder to cut without breaking. Baked 25 minutes, let cool for 10 then cut with a sharp butcher knife and then baked both sides at 250 degrees for 13 minutes. They are not real hard, but melt in your mouth when dipping in coffee. Also drizzled with confectioner's sugar icing with peppermint flavor. Oh ma ma!

Gingerbread Biscotti

These should be called clove-ginger biscotti. If you are not crazy about cloves, cut back on it. It is pretty potent. Love these with coffee, however.

Chicken Breasts Pierre

This is restaurant-quality fare. I used vodka to deglaze the skillet and a shot in the sauce while reducing. Other than that, I followed the recipe as written. Poured it over rotini pasta. Excellent!

Fried Cornmeal Mush

My Mom used to make this and slice it thin and then fry until crispy in bacon grease. Then she would top it with an egg and squirt a generous amount of ketchup on it. I thought "Yuck!" Then I tried a bite and have eaten it ever since.

Black Bean Vegetable Soup

This needed lots of help for my palate. Even with reveiwer suggestions. I added more chili powder, more cumin, some chili seasoning, liquid smoke, cilantro, thyme, red bell pepper. When I laddled it into the bowl, I added a spoonful of salsa and some sour cream and wah-lah! Ate it with tortilla chips and it was fantastic. Very good base recipe as submitted and one can tailor it to their taste. Very satisfying.

Tomato and Bacon Jam

So glad I gave this a whirl. I cut back the sugar to 3/4 cup and it is still sweet. Since my bacon wasn't that smokey, I also added a bit of liquid smoke. As it was cooking down, I drizzled some over grilled zucchini and "Oh MY!" I think I will add some chili powder next time just for my taste and cut back the sugar a little more so it is a little more savory. Thanks for posting the recipe!!!

Easy Microwave Chocolate Cake

Per reviews, I also upped the sugar to 3/4 cup and 3 tablespoons cocoa. Chilled in fridge and iced it with frosting. Sure tasted like chocolate cake to me! Just love that I can have my cake and eat it, too, during the hot months when I can't bake in the oven. Great size for singles or couples. Will add instant coffee next time for a switch.

Mom's Warm Milk

I've tried warm milk different ways and couldn't stand it. I decided to give it one more chance with this recipe. Glad I did! I LOVE this! Didn't have nutmeg so I used pumpkin pie spice. Yum! Going to be having this quite often.

Cumin Chicken With Apples

Truly different! Needed a recipe since I got rained out of doing BBQ and glad I tried this! Quick to fix. Better to use firm baking apples like Johnathon. I used gala. They turned to mush, but very nice flavor to gravy. Sauce could be used on noodles too. This will be a favorite!

Creamy Rice Pudding

How can something this simple be so to-die-for??? It is easier to do it all in one pan and to add all the milk instead of dividing. I added a little more vanilla and also cloves and cinnamon. Will be making this often!!!

Green Cabbage Caldo Verde

I wasn't sure this was a keeper until I tried it the next day. Wow, so much richer. I did use smoked sausage and fried it first and then added some butter to the soup. Five stars for simplicity!

Best Cream Of Broccoli Soup

This is the simple recipe like my Mom use to make. I don't puree mine, I just use a potato masher as I like a chunkier soup. Simple, fast, and very tasty. Adding cheddar cheese is a plus.

Best Teriyaki Sauce

This is good stuff. But it is awfully salty. I will use lite soy next time. Also did not have rice wine vinegar or a habenero. I used rice vinegar on hand. I like it better than bottled teriyaki.

Broccoli and Ramen Noodle Salad

Love it! I halved the dressing ingrediants and used fresh broccili floweretts and it was almost impossible to stop eating. Love that it calls for so little oil. Very simple and quick!
