Zucchini Brownies

Reviewed: Jul. 26, 2009
i thought these were really good, but they didnt go over too well with anyone else. i made exactly as written. they were complaining they were too "chewy and fudgey". also, i thought the frosting was delicious. if nothing else i will absolutely use that again.

Braised Balsamic Chicken

Reviewed: Jan. 23, 2009
we both enjoyed this recipe. i didn't think the vinegar taste was too strong probably b/c i didn't use too much of the sauce when serving this dish. i served over angel hair with a little bit of olive oil and some steamed green beans. i also used boneless skinless thighs and added some fresh mushrooms right at the end of cooking. tasted great. thanks so much....

Easy Mexican Casserole

Reviewed: Jan. 6, 2009
we really enjoyed this recipe. i used black beans in place of chili beans, 1 can of diced tomatoes with chiles drained, and shredded mexican blend cheese. i also used one pack of taco seasoning on the ground beef before adding the salsa. this was very easy although a little time consuming. we will definently be having this again. thank you for the recipe.

Yummy Honey Chicken Kabobs

Reviewed: Oct. 11, 2008
this marinade is delicious! our favorite kabob recipe. i use red pepper and onion along with the chicken and i doubled the marinade. ***** also used this for a marinade on pheasant that my step-son got. very good. doesn't need to marinate very long at all. a half hour does the trick if your in a pinch.

Daddy's Fried Corn and Onions

Reviewed: Oct. 8, 2008
very good way to dress up corn. i used 2 cups of frozen corn since that is what i had on hand... i also added 3 small cloves of garlic. i loved it. hubby wasn't sure about the onion/ corn combo, but he cleaned his plate and had seconds so it must have been OK.

i made this for monday night football for the guys. i thought it was good. as per previous reviews, i used more hot sauce than called for and also a few shakes of cayenne pepper and old bay. i also used one 16 oz. can of lump crab meat and a little less onion than called for. everyone liked it and there was none left at the end of the night.

Pizza Casserole

Reviewed: Sep. 24, 2008
i gave this 5 stars with a few changes. i used corkscrew pasta and added olives and mushrooms in addition to what the recipe calls for. i also used 3 14oz jars of pizza sauce. i think without these changes it would have only been a 3 or 4 star recipe. hubby really liked it. his only complaint was he could have used a buttered roll with it. This was even better the next day for lunch!!!
