Bolognese Stuffed Bell Peppers

I DOUBLES the ENTIRE recipe and barely had enough for 6 large bell peppers. Other than that, I LOVED this recipe. It is delicious.

Honey Apricot Pork Chops

This is a simple and delicious recipe! I added a lot more honey and used a whole can of apricots. Be generous with the salt on the chops. I served this with rice to absorb some of the sauce and it was a hit!

Fluffy Biscuits

Mine came out great! However, I used butter. Always. It's easy to screw up, though…as all biscuits are. The trick is to not over-knead it.

Mahi Mahi with Coconut Rice and Mango Salsa

This dish is so good and pretty simple. I only used half the red pepper and it was just the right spiciness. I recommend doubling the mango. I just thought more mango with each bite would have made it even more perfect. Man oh Man this was sooooo good. I felt like I was in a Mediterranean restaurant.

Rich and Creamy Beef Stroganoff

very good, but VERY fattening. I would suggest using just a spray of olive oil for all the sautéing instead of all that butter, and low fat or fat free sour cream and cream cheese. ALSO…2 tsp of red pepper flakes is way too much. I used one and it was still a bit too hot. And I like spicy food for the most part.

These are amazing! I used chocolate grahams because that's all I had and they were so rich and so good! I gave them 4 stars because I cut them into 15 pieces (about 2inx2in) and doing the math they are 400 calories each!!! Holy COW! There has GOT to be a way to make this lower cal so I can enjoy them without the guilt.

Easy Butternut Squash Ravioli

When boiling, I definitely only needed to boil for like 30 seconds. Any longer, and they turned to mush. Other than that, they were really yummy :) Oh, and make sure to keep the heat on medium high when sautéing in garlic butter afterward to give it a somewhat crispy texture. Otherwise, it will be sopping in butter.
