Quick and Easy Peach Cobbler

My neighbor gave me this recipe, but added 1 tsp. vanilla, 1/4 tsp. cinnamon, and used peaches in light syrup instead of heavy(the light tastes just as good as the heavy and saves a few calories). for thicker pieces, I also bake it in a 8x8 or 9x9 pan for just a touch longer than the 9x13 calls for. It is heavenly served warm with ice cream! Adding the nutmeg sounds good--I'll try that next time. It's a fast, easy dessert that everyone loves!

This is AWESOME! Definately go for the caramel topping with the Eaglebrand. Best if it has time to sit in the fridge a bit.

Slow Cooker Turkey Breast

This is the only way I cook turkey--it is VERY easy and makes enough to get another meal or two with the leftovers (sandwiches, turkey manhattans, turkey tetrazzini, etc.) My family LOVES it! You don't need to add butter, water, or even the onion soup mix. It makes plenty of juice that can be thickened into gravy or just poured on top of the sliced turkey. I just sprinkle paprika over the top to help brown or give color and cook on low all day while I'm at work. I highly recommend a Norbest turkey breast. It is not salty like other brands, yet has good flavor. It also has a built in pop-up thermometer. If I have room, I throw in carrots and potatoes on the bottom.

Shrimp Scampi V

I followed the suggestions of using 1/2 the wine and adding lemon juice--I squeezed in 1/2 of a fresh lemon (a must). I think the wine would have been too powerful without halving it (that's why I rated the original recipe with only 4 stars). I also used the idea of letting all of the ingredients cook together a bit before adding the shrimp. All great suggestions! This was a delicious and light recipe. I added about 1 Tbs. of fresh basil to the sauce at the end while it was cooking, and it gave off good flavor. Don't over cook the pasta!

Yummy Cheese Ball

A friend made this, and I liked it so much that she told me I could find the recipe on this site. I used toasted almonds instead of pecans, but didn't let it all sit overnight--I think it would have had better flavor if I had.

Amazing Pork Tenderloin in the Slow Cooker

Yikes! I used a drinking wine as others suggested, and the meat turned purple! It tasted okay, but will try a cooking wine the next time. Used 1/2 the onion soup mix to cut down on the saltiness.

Slow Cooker Pepper Steak

This was delicious!! I'm always looking for new ways to make round steak, and this was the best we've had lately. To add color, I used one each of a red pepper, green pepper and yellow pepper cut into strips and put in at the beginning so that they were soft. I served it over white rice and topped with crispy chow mein noodles. Yummmm!

Beer Margaritas

This was a great drink recipe--delicious and super easy. I used the 12 oz. of water, let it set overnight (just so I wouldn't have to mess with it the next day while preparing the food) and served it on the rocks with salt and a twist of lime. I buy the Chi Chi's pre-made margarita mix and this was just as good, better even. Will definately make again--my friends have requested it! Be careful. It packs a punch!
