Quinoa Chili
This chili tasted great although I changed it up a bit. I used ground turkey instead of ground beef and omitted the jalepenos because I didn't have any. In its place, I used crush red pepper and also a couple tablespoons of horseradish for an extra kick. I also didn't use zucchini because I didn't have any on hand. Lastly, I didn't add the quinoa to the pot of chili because it is my personal preference to mix the quinoa and chili in my bowl (because of the water soaking up issue).

Quinoa with Peaches and Creamy Yogurt
I didn't follow the recipe to a t, but it was pretty good. I forgot to get lime juice, so I didn't use that, and I bought precut peaches found in the produce section. I should have used more peaches and probably used lime juice as well. Overall, I like it and I believe it is a great way to use quinoa. Thanks for sharing this recipe.

I like this recipe. I tried using ground beef instead of pork. It may have tasted better if I would have used pork.
