I think this was the first dish I tried with quinoa, and I love it! I like that it's very adaptable to whatever you want... you can add or take away veggies, change up the spices (I sometimes will add my homemade taco seasoning), etc. If you don't like cilantro (I love it, but hubby hates it), the dish is still good without it. I also use chicken broth, because that's the only think I keep on hand. This is perfect as a side dish or a main dish, hot or cold! And unlike many salad-type dishes, this one keeps well in the fridge.
