Sweet Potato and Black Bean Chili

This recipe was 4 stars as written (omitting the jalapeño and decreasing chili powder). It definitely would need more liquid to be chili/soup like. What I did that made it delicious? Added a little leftover corn, then put it in a greased 13x9. I mixed up a batch of my regular CORNBREAD (buttermilk cornbread on this site), and used a little less sugar and a handful of shredded cheese. Spread the cornbread mix on top, and bake at. 375 for 20-25 min until golden. Add a dollop of sour cream and it is absolutely divine!

Best Brownies

These were a little too sweet for my liking (almost a little sickly sweet), and I think I'll try cutting the sugar down to 3/4 cup next time. I did not make the frosting, as I'm not a huge frosting fan. I substituted the butter with applesauce and they turned out well.. more cakelike than fudgey, but I'm not super picky on brownie consistency. Overall a good, quick recipe that prevents you from eating the boxed processed stuff!

Buttermilk Syrup

My husband loved this, but I gave it 4 stars because I had to make some changes. I decreased the sugar to 1 cup and it was still on the sweet side. Also, I pulled it off the stove after 5 minutes of boiling (not 7) and I'm glad I did. It was just the right consistency when cooled. Any longer on the stove and it would've been too thick. Overall, I will definitely be making it again.

Watermelon and Strawberry Lemonade

Oh my goodness this is so delicious! I made this without the water and 3/4 cup sugar (my watermelon wasn't super sweet), and put them into ICE POP molds in the freezer. Soo good and perfect for a hot summer day. I had a lot left over from my 6 pop holder, so I added in the water and put it in the fridge to drink. YUM.

Quinoa and Black Beans

I think this was the first dish I tried with quinoa, and I love it! I like that it's very adaptable to whatever you want... you can add or take away veggies, change up the spices (I sometimes will add my homemade taco seasoning), etc. If you don't like cilantro (I love it, but hubby hates it), the dish is still good without it. I also use chicken broth, because that's the only think I keep on hand. This is perfect as a side dish or a main dish, hot or cold! And unlike many salad-type dishes, this one keeps well in the fridge.

Breaded Ranch Chicken

Ooey Gooey Breakfast Rolls

We have been making a recipe just like this for years and LOVE them! The only thing we do different is use frozen bread rolls (12 of them... Rhoades sells them in a bag), plus, we pour 1/2 cup heavy cream over them right before baking in the morning to make more of a butterscotch sauce when inverted...SOOOO good! These will always be my favorite "special" breakfast!

Easy and Delicious Chicken

This is my husband's favorite recipe! I love that it's so easy. I always use frozen breasts and shred the chicken after cooked. I serve this over rice, then combine leftovers with rice and broccoli and put it in the freezer as a casserole for later. Excellent!

German Chocolate Cake Frosting II

This topping is excellent and easy to make. Adding cornstarch is NOT at all necessary! Like someone else said, turn up the heat and stir constantly until this thickens. From the start, I cook mine on medium heat. Yes, it still takes a while to thicken, but BE PATIENT... it does thicken! I also toast both the coconut and nuts (I've used everything from pecans, to walnuts, to filberts).

Speedy Chili Mac

Very easy, quick and budget friendly. We were nearly out of food with no money for groceries when I saw this recipe, and thank goodness I did! Changes I made: I added a can of corn, some taco seasoning, and some chopped garlic when heating the soups. I stirred everything together and served that way (without baking). So quick and tasty for what it is!

Sweet Corn Cake

Definately double the recipe, except for the butter. Only use 1/2 c. I have made it both ways, and you can't tell any difference with less butter. Also, to avoid excessive dryness as some others have indicated, cook it for a little less time (I cooked my double batch for 65 minutes).
