Blueberry Cream Muffins

Reviewed: May 5, 2014
I discovered that I only had about 1/4 cup of Sour Cream, so I was forced to substitute. I was making a half recipe, and in order to come up with 1 cup, I added Bavarian Yogurt (full fat) and low-fat buttermilk to the small amount of sour cream that I had. I have not made this recipe as written, so I can't compare the original to the yogurt/buttermilk version, but the muffins rose well and were tasty. So if you need to substitute, the yogurt will work. I also added an extra 1/2 cup of blueberries on the advice of other reviewers.

Chef John's Macaroni and Cheese

Reviewed: Sep. 20, 2013
I altered this to increase the sauce while still using 1 lb of pasta. It was great! Only 4 of us home and I think the whole thing will be gone.

Pumpkin Zucchini Bread

Reviewed: Jun. 15, 2012
My teenage boys have been asking when the zucchini will be in season so they can have this delicious Pumpkin Zucchini Bread. The spice blend is perfect, and there is a great contrast between the crisp crust and moist interior. Tasty warm. What does it taste like after it has completely cooled? I may never find out!

California Smoothie

Reviewed: May 31, 2012
Teenage son says this is the best smoothie I've ever made. High praise! I liked it too, and especially since it is simple. I did not have lemon yogurt, so I mixed up my own using 1 cup plain yogurt, juice and zest from one medium lemon, and sugar to taste. That made enough lemon yogurt for three smoothies.

Amy's Sensational Summer Salad

Reviewed: May 31, 2012
Yummy! I made 6 servings worth for my family of 5. Oldest teenage boy opted out, and ate something else. Little girl took a small serving, and when she went back for more, it was all gone. So I would make more next time, but not a complaint - it went over so well because it was so tasty!

Our Favorite Balsamic Vinaigrette

Reviewed: May 31, 2012
Good and plenty tart. Another recipe had equal amounts of oil and vinegar. I can't imagine how tart that would be! I did not have a shallot, so I used finely minced onion, and it tasted fine.

Emily's Famous Hash Browns

Reviewed: Apr. 3, 2012
Can you make some more of those hash browns you made last night? 30 years of marriage, and that is a first! My husband is a really good cook, so I value his praise. The only change requested? Make a double recipe, the teenage boys didn't leave enough to suit Dad! Thanks "your mom!"

Cheese's Baked Macaroni and Cheese

Reviewed: Nov. 9, 2011
Yummy! I did make some changes: I didn't have kielbasa, so I used some diced bacon from a package of bacon ends-n-pieces. Also, I had some cream cheese left over (about 3 oz.) that I added to the cheese sauce. I used part seasoned dry bread crumbs and part crushed crackers. I didn't measure the crumbs/crackers, just added until I liked the look.

Chicken Souvlaki Gyro Style

Reviewed: Jul. 27, 2011
Vinaigrette, NOT Vinegar. This recipe is a family favorite. We like to serve it with homemade pita bread and a side of hummus. Those reviews that say the marinade is too sour probably used balsamic vinegar, rather than a vinaigrette salad dressing. Vinaigrette is 3 parts oil, 1 part vinegar shaken together.

Breakfast Casserole

Reviewed: Mar. 4, 2010
Yummy! I did make a few changes: I had a bag of crusts cut off of white bread for tea-party sandwiches. So I used ONLY crusts. I cubed them and toasted them for a few minutes in the preheating oven. I recalculated the recipe for six, which called for 9 eggs, but I only used 8. I also added one medium onion, chopped fine and cooked with the sausage. This was easy and very tasty!

Beef Fondue with Sauces

Reviewed: Dec. 23, 2009
We have used this recipe at the holidays for several years. I lost my printed copy, and was so happy it was saved in my recipe box. These sauces are really good!
