Hearty Tuna Casserole

This was a pretty great meal. My husband loved it! I didn't have some of the ingredients (thyme, celery) and it was still tasty! Also I used cheddar instead of monterey (another thing I didn't have) I'll be making this again in the future!

Chocolate Glaze II

Pretty tasty, but I had to add WAY more milk for it to be drizzle-able! The said recipe made it a thick frosting...I had to look over the recipe a few times to make sure I was doing it right, but I was. So, my advice is MORE MILK!

Baked Salmon with Coconut Crust

I had no problems with this recipe. I liked it, and my husband loved it...in fact it gave him shivers, as he put it. NOTE: I followed one's suggestion and wrapped it in tinfoil to bake for 12 minutes, and broiled it for the remaining 3. and the crust came out great. The meat itself could have been a little flakier though...next time I may reduce the temp and cook longer. All in all, YUMMY!

Roasted Pumpkin Seeds

These turned out great. They lacked a certain taste so I added a little garlic salt after and they were perfect. I dried them overnight first and while baking them at 300 degrees, I stirred them around every 10 minutes and they came out nice and crispy! Mm!

Basic Hummus

I liked most things about this recipe but the olive oil was too strong for my taste. I would probably make this again, just with less oil. Very easy and quick to make. I made it for a party and people loved it.

Oatmeal Whole Wheat Quick Bread

Awesome! I was looking for a whole wheat recipe and stumbled on this quick bread. I liked the taste and the fact that it's healthy. I doubled the recipe and baked it at the said temperature and time, and it was brown on the bottom but not cooked completely all the way through. Despite that, I would definitely make this again.

Honey Wheat Bread III

I like the taste, but I think I may need to add hot water to the yeast. I followed the directions as they are written but the loaf didn't rise as much as it should have. It's still good though! I'll make this again with a couple revisions.

Grandma's Gingersnaps

WOW - these are the best! They were easy to make, and I followed the recipe exactly. They came out just as they said they would - chewy on the inside with a little bit of cisp on the outside. Perfect for Christmas baking! Yum!

Baked Tortilla Chips

I had to use whole wheat tortilla's because that's all I had. I brushed on olive oil (didn't have a mister) and sprinkled with sea salt. They were baked at 350F for seven mins, turned over and baked for another 6 minutes. They turned out pretty good!

Guacamole Chicken Melt

This was really yummy! I didn't have a few of the ingredients on hand, such as the Creole-type seasoning. I just cooked the chicken in olive oil and sprinkled some sea salt on it. I really liked how the guacamole adds a creamy texture to the meal! I also didn't have any cheese and ate it with out, and it was still very tasty. A great quick meal.

Best Chocolate Chip Cookies

Alright - I don't know what I did wrong! I followed these directions and mine came out hard. Not burnt - just hard. I baked the first batch for 21 minutes, and the second for 15 minutes and they were still hard. The third I put in for 12 minutes and they turned out hard-ish. I even got a fourth batch out of it, put it in for 10 minutes and they were okay, but the taste also wasn't the best. I feel like I wasted several batches of cookies! Grr! But I'm assuming it's something I did, I just wish I knew what it was!

Creamy Pesto Chicken and Bow Ties

So good. I made a few revisions - one, I made it with mushroom soup because that's all I had on hand. I used olive oil to sauté the chicken for a healthier option instead of the butter. I added diced onion, a clove of garlic and sliced mushrooms. It was easy, fast and we loved it! I would definitely make it again.

Pumpkin Chocolate Chip Muffins

Yum! I doubled the recipe, and used a cup of brown sugar and a half cup white. I also didn't have all the individual spices (except cinnamon) so I used Allspice and a 1/4 tsp more cinnamon. I also added 1 tsp vanilla. Turned out YUMMY! I got 15 large muffins out of the doubled recipe.
