It doesn't get any easier. I halved the recipe and it covered a 9 inch round layer cake. This ones a keeper!

Pumpkin Gingerbread

So delicious - I cut the sugar to 2 cups and replaced all the oil with sugar free applesauce and it tasted wonderful. Also, it makes A LOT. I got a 9X5 loaf, 12 regular muffins and 6 large muffins from this recipe.

Quinoa and Black Beans

SOOO delicious! I swapped out the corn for another can of black beans and from another recommendation paired this with the 'salsa chicken' recipe on this site. Yummy and keeps well in the fridge - it was dinner and lunch the next day.

Coconut Cream Cake I

Awesome. I did follow the other reviews to let the cake cool to room temp before pouring the cream/milk mixture over the top. I also did not use the flaked coconut. It's amazing.

Charley's Slow Cooker Mexican Style Meat

I used around 3 oz of hot sauce and that was perfect as far as I'm concerned, that way people can add more heat if they want but it didn't overwhelm those who don't like things quite as hot. I left my onion and jalapeno in big chunks so I could fish them out before shredding the beef and then letting it sit on low for another hour. I'd definitely make this again.

Old Fashioned Coconut Cream Pie

Ok, so I tried to follow other users reviews and go use coconut milk. Unfortunately I couldn't find coconut milk at my grocery store so I went with a can of coconut cream which brings me to my point - that swap out plus using corn starch instead of flour made the texture a little bit weird, it was pretty thick and lumpy. That being said, it was so delicious that no one cared about that. This pie is awesome. I made it as a request for a friend, I have never liked coconut but I gave this a taste and it is wonderful. I will absolutely make this again. But next time I'll cut the corn starch down a little and find coconut milk instead of coconut cream.

Brisket with BBQ Sauce

I made this in my crock pot - about 11 hours on low - and it was delicious. When I took it out and sliced it up I snuck a taste and it was so good I decided to serve it as is and then everyone could add as much or as little sauce as they wanted. I'd give it more than 5 stars if I could.

These cookies are amazing. I used one package of vanilla and one package of chocolate pudding - so good. I brought half the batch to work and they are gone, that's saying somethin.

Raspberry Chocolate Torte

It looks very impressive but I thought something was missing. I think next time I'll double the cream cheese in the frosting. I was also thinking of putting a raspberry sauce in the layers instead of raspberries and then garnishing with fresh raspberries on top.

Turkey Tetrazzini II

This recipe was amazing. First of all, I stopped at my grocery store on my way home from work for a cooked turkey breast and they didn't have any so I had to settle for chicken. So technically it was chicken tetrazzini. Either way, it was awesome. I followed the advice of others and sauteed an onion, a few cloves of garlic and a handful of sliced mushrooms with the butter. I also added about a cup of frozen peas and carrots to the pasta right before it was done and drained it all together. Absolutely fabulous.

Oatmeal and Wheat Flour Blueberry Pancakes

These were awesome. I didn't have whole wheat flour or soy milk but it didn't matter. I was a little wary of the olive oil but I went with it. Also, the batter looked very thin when I first put them on the griddle so I thought I did something wrong but they puffed up nicely. Yum.

Gourmet Mushroom Risotto

This is in my top 5 best ever recipes. It is so rich, creamy and delicious I couldn't believe it came out of my kitchen instead of a restaurants. Wow. Wow, wow, wow. I served it with roasted chicken and it was fantastic. I didn't put chives or white wine in - I forgot to pick up chives at the store and the wine that I had on hand was way too sweet for cooking. Even without those things it was outstanding, I'm sure if I had added them it would be even better. Absolutely delicious recipe.

Apple Crumb Pie

This recipe is delicious. The filling was very runny because I made the mistake of doubling the sugar/flour/cinnamon since I had a 10 inch deep pie plate I used almost 11 cups of apples. Even though it's runny it still tastes fantastic. I was looking for more of an apple crisp so I didn't use a pie crust on the bottom. Absolutely fantastic.

White Chocolate Raspberry Cheesecake

YUM! A little bit time consuming but so worth it. I doubled the oreos for the crust and baked it in a water bath. Turned the oven off after an hour and left it overnight. So so so delicious and so worth the effort!
