Baked Kale Chips

They really do taste sort of like potato chips if you close your eyes! First time trying these and they were great! I skipped the parchment paper. Spray the pan with olive oil, lay dry kale down (with some space between pieces) spray the top of it with oil and cook for 7 minutes at 350 (according to my newish oven). Sprinkle with season salt and eat!

Bread and Celery Stuffing

I veganized it by using "fake" chicken broth and vegan "butter" and added some garlic and mushrooms. Other than that kept it the same and its great!

Curried Hummus

Classic Macaroni Salad

My official macaroni salad recipe from here on out! Skipped the green peppers, carrots and pimentos. Used Miracle Whip instead of Mayo. The dressing was perfect! Thanks! UPDATE: I veganized this using Veganaise and its still awesome! Thanks again!

Cookie Dough for Ice Cream (Eggless)

followed the suggestions of other reviewers (mostly "giggletush) and it came out great. We were excited that its totally vegan if you use soy margarine for the butter! Add it to some rice ice "cream" and its close to the real thing!

Garlic Fried Rice

This was ok. I ended up adding a lot more butter, garlic, and seasoning salt to make it taste like anything. I added chopped up cooked veggies and firm tofu and made it a main course. I think this is something that would be better the next day after letting it "marinate" in the fridge all night.

Baked French Fries I

very good and easy! I was worried they weren't going to get crispy, but once I took them out of the over and let them cool a little, they were fine. We're going to experiment with other flavors now. Parmesan cheese, taco seasoning, who knows!

Chicken Tortilla Casserole

didn't realize I'd need to refrigerate it for 24 hours so I cooked it the same night, it was still good! Took another reviewer's suggestion and added cheese after each tortilla layer and served with some sour cream. Thanks!

Stove Top Pot Roast

Totally foolproof. I added beef bullion cubes to the water instead of broth. Chuck roast (usually tough) came out so tender! Oh and it only took an hour an a half total for a 2 lb roast.

Beef Fried Rice

I made the rice with chicken broth instead of water, and pureed green pepper, onion and mushrooms into it. (I like to sneak veggies into the food I feed my family!) Good and easy. The hamburger works surprisingly well with it!
