Baked Kale Chips
They really do taste sort of like potato chips if you close your eyes! First time trying these and they were great! I skipped the parchment paper. Spray the pan with olive oil, lay dry kale down (with some space between pieces) spray the top of it with oil and cook for 7 minutes at 350 (according to my newish oven). Sprinkle with season salt and eat!

Bread and Celery Stuffing
I veganized it by using "fake" chicken broth and vegan "butter" and added some garlic and mushrooms. Other than that kept it the same and its great!

Baked Polenta with Fresh Tomatoes and Parmesan
This was good, my first attempt at polenta and now I'm hooked. Plan to try making it in a rice cooker next, I've heard it super easy!
