Power Cookies

these are fantastic (not as good as butter-based, of course), but i recommend letting them cool before "judging" them-- they're kinda bean-y otherwise...i used regular red kidneys bc that was all i had (maybe that made a difference?), added pecans and chocolate chips and left out dates and raisins. the "lack of liquid" problem lead to me adding about 1/2c milk (just added 'til it was a good consistency). i assembled it all in the food processor, then stirred in the choc and pecans. nom.

Cookies for Rookies

i was craving some pb/chocolate, but bc i cannot help myself in the presence of gooey chocolate chippy baked things, i wanted to avoid a big batch. i actually halved this one, and it turned out great! hit the spot. :-)

Awesome Apple Muffins

too moist with too little body/structure to it. the flavor wasn't terrible (apples=NOM), but they barely rised and were not dense enough to support all the appley goodness. i'll try again, but probably use less apple (or sauce one of them?)

Applesauce Cake

not bad..."rubbery" is to be expected given the lack of fat- i used 1 whole egg and whole wheat pastry flour, and it turned out pretty decently. the yolk likely helped...will likely use again-- but may tweek it a tad as i go :-)

Whipped Shortbread Cookies

these didn't turn out for me. they spread out too much in the oven. i tried them at 300 and at 350 (based on reviews), but neither way worked. it must have been something i did, but i can't see what my mistake was.....i probably won't try again.

Toll House® Blonde Brownies

!! i like the speed/ease of bar form, and how tender and puffy they are! i ate two before i could get them out of the pan....now i'm making some to take to my workmates on christmas. i cut the recipe by a third and used a glass 9X13 pan. it took closer to 23 mins in my oven, but they came out yummmmmy!!

Apple-Banana Oatmeal

i made this for my non-fussy 26 year old brother this morning and he looved it. i made it as it's written except for using wheat bran instead of oat bran. i added a bit of brown sugar at the end. he gobbled it up; i can only assume it was good!

Shaker Lemon Pie

fantastic! this is my dad's favorite, and tastes just like the "real thing" (that i hated when i was little(r)). its very simple to make, too. i think i usually use 3 lemons, and a little less sugar b/c we like it more tart...slicing wasn't impossible, but i bought a mandoline for the slicing soon after my first one :-)

apparently, i made these 5 years ago and hated them.... 5 years later...and perhaps a tad more flour....THEYRE AWESOME. i halved everything (kept the same amount of cinnamon, though!) and added chocolate chips. perrrrfeccctttt.....

Banana Oat and Bran Cookies

these are hardly cookies. theyre more like mini, chewy banana breads. i tried it twice, thinking i had screwed it up the first time b/c they were so runny.... theyre not too bad, really... i had to add extra flour and oats, but never got them anywhere near the consistancy needed to roll them. i dropped some, and used a mini muffin tin for some. i added coconut to my first batch, and chopped peanuts to the next ones. all natural peanut butter + a couple of these things = yummy breakfast. =] quite filling, too. in the future, ill probably just make some banana bread with my too-ripe bananas tho.
