Low Carb Cauliflower Leek Soup

So easy. So yummy. I blended mine in the blender at the end, and peppered each bowl. This is tasty soup. Filling, slightly sweet and enjoyable with whole grain garlic toast.

Mexican Beef Supreme

Yummy! Yummy! Yummy! A new family favourite. I skipped the jalep. as my husband is super-sensitive to them, but I substituted a spicy green salsa for the kick. Also,I used white onions and they got too mushy, so I recommend a sturdier onion. I think I'll try it with shredded meat next time and serve it in tortillas. *** I made this again while visiting family, only I used leftover cooked chicken and served it in tortillas - they LOVED it!

Homemade Shake and Bake Mixture

I used an entire packet of saltines and 1 cup of PC Italian Breadcrumbs for the mixture. I also substituted celery seed for celery salt due to the salt already in the crackers. I wet the chicken legs and placed them into the mixture and hand-coated before transferring to a parchment paper lined cookie sheet. I baked in a preheated oven at 400 degrees for 35 mins. It was crispy on the outside and moist on the inside. My 4 and 5 yr old boys had two pieces each. (see photo #3)

My husband and I both enjoyed this easy recipe, however, I didn't get much "sauce" from the ingredients so next time I will double everything but the fish, and maybe add some tomato sauce.

Minnesota Pork Chops

My husband loved this recipe! He ate it for lunch, then dinner, then lunch again - I was lucky to any at all! I doubled the recipe, except for the chops, because I wanted lots of side stuff. I used two boxes of Uncle Ben's Classic Long Grain & Wild rice and sprinkled the pouches of herbs and seasonings they came with instead of the chicken stock. I just added water until the ice was completely covered, and baked sealed with tin foil for two hours without any peeking. The rice came out perfect, and the chops were so tender YOU COULD CUT THEM WITH A FORK! The only reason I didn't give this 5 stars is because it's a new twist on an old classic.

Oat Applesauce Muffins

I just pulled mine out of the oven, and they're very good. I used Wild oats and Homo milk as I didn't have the others on hand, and I added a dash of cinnamon and Mexican vanilla, but I followed the baking instructions exactly. They are very moist and tasty.

Easy Salsa Meatloaf

I made it exactly to spec, and it turned out quite tasty. I recommend using extra lean beef or ground turkey to reduce the fat - between the cheese and the beef I had to "drain" it twice while cooking.

Cheddar Mushroom Pork Steaks

It was tasty over rice, but I found it not much different from ordinary mushroom soup pork. I used shoulder blades, and cooked it in a skillet to cut down on cooking time (only 30 mins this way.) Next time I'll try it with a cup of shredded chedder instead of the chedder soup.

Jay's Jerk Chicken

I marinated over night, but the marinade just didn't pierce the brest halves. It tasted like plain chicken with a yummy sauce on it, which wasn't quite what I was looking for.
