Minnesota Pork Chops

Reviewed: Dec. 5, 2007
My husband loved this recipe! He ate it for lunch, then dinner, then lunch again - I was lucky to any at all! I doubled the recipe, except for the chops, because I wanted lots of side stuff. I used two boxes of Uncle Ben's Classic Long Grain & Wild rice and sprinkled the pouches of herbs and seasonings they came with instead of the chicken stock. I just added water until the ice was completely covered, and baked sealed with tin foil for two hours without any peeking. The rice came out perfect, and the chops were so tender YOU COULD CUT THEM WITH A FORK! The only reason I didn't give this 5 stars is because it's a new twist on an old classic.

Orange and Onion Salad

Reviewed: Sep. 7, 2007
I tweaked the recipe a bit to personalize it, but overall it was delicious. I recommend using a mandolin to get your onion as thin as possible, as the thinness was key to how much flavour was mingled with the orange.

Homemade Shake and Bake Mixture

Reviewed: Sep. 25, 2011
I used an entire packet of saltines and 1 cup of PC Italian Breadcrumbs for the mixture. I also substituted celery seed for celery salt due to the salt already in the crackers. I wet the chicken legs and placed them into the mixture and hand-coated before transferring to a parchment paper lined cookie sheet. I baked in a preheated oven at 400 degrees for 35 mins. It was crispy on the outside and moist on the inside. My 4 and 5 yr old boys had two pieces each. (see photo #3)

Pierogi (Polish Dumplings)

Reviewed: Jan. 6, 2012
I've seen other recipes like this one, and they only called for 1 egg and 1/4 c of sour cream, but I figured "how can 165 people be wrong" so I gave it a go... I don't know how the other 165 people managed to make pierogies out of this, but after following the recipe to a tee, I was left with a goopy mess. I started adding 1 tbsp of flour at a time, until, 2 extra cups of flour later, I gave up. I *still* wasn't able to get it smooth enough to roll out. I'm now scraping the gooey remains off my countertop and looking for a recipe with less liquid.

Balsamic and Rosemary Grilled Salmon

Reviewed: Oct. 22, 2007
urned out I only had Raspberry Balsamic Vinegar, but it was still delicious. My husband really enjoyed the salmon and ate it all before I could get seconds!

Easy Salsa Meatloaf

Reviewed: Dec. 19, 2007
I made it exactly to spec, and it turned out quite tasty. I recommend using extra lean beef or ground turkey to reduce the fat - between the cheese and the beef I had to "drain" it twice while cooking.

Grandma's Gingersnap Cookies

Reviewed: Dec. 14, 2011
Soft but Chewy, and not too sweet. I used Becel salt-free margarine instead of shortening, but they turned out perfect.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Reviewed: Dec. 8, 2008
The filling is yummy, but my husband and I both agreed it belonged more in a quiche, omelette, or stuffed in chicken; the pork just didn't taste right with it.

Barbecue Ribs

The sauce is delicious. I didn't have rum, so I skipped it. I also boiled the ribs first.

Slow-Cooker Pepper Steak

Reviewed: Feb. 6, 2008
Way too salty, even skipping the tsp of salt. Our tongues were raw and my husband got heartburn.

Jay's Jerk Chicken

Reviewed: Dec. 12, 2007
I marinated over night, but the marinade just didn't pierce the brest halves. It tasted like plain chicken with a yummy sauce on it, which wasn't quite what I was looking for.

Slow Cooker Chicken Cordon Bleu

Reviewed: Jan. 25, 2014
I took it a step further and butterflied the breasts to fold the ham and cheese inside. Otherwise, I followed it to a tee, and it was a smashing hit.

Braised Balsamic Chicken

Reviewed: Jan. 24, 2014
Everyone loved this! I was worried it would be too sharp tasting because of all the vinegar, but it was just perfect.

Low Carb Cauliflower Leek Soup

So easy. So yummy. I blended mine in the blender at the end, and peppered each bowl. This is tasty soup. Filling, slightly sweet and enjoyable with whole grain garlic toast.

Oat Applesauce Muffins

Reviewed: Nov. 27, 2008
I just pulled mine out of the oven, and they're very good. I used Wild oats and Homo milk as I didn't have the others on hand, and I added a dash of cinnamon and Mexican vanilla, but I followed the baking instructions exactly. They are very moist and tasty.

I layered this with some breaded chicken thighs I needed to use up. My husband loved it, and demanded I make it again soon.

This was tasty (I made it without the bacon), but the chicken dried out too much while cooking.
