Peanut Butter and Jelly Oatmeal Pancakes

This is a great recipe. The first time I made these, I think that I mixed too long and cooked on too high a heat. The second time they came out perfect. Everyone loved them with strawberry preserves and maple syrup. They are not sweet AT ALL so you want to add something sweet on top. Delish!

Cone Cupcakes

These are great - I am glad that I stumbled across this recipe. I plan on making them at my Son's 6th birthday and letting the kids decorate and pipe frosting on them. I made a half recipe to try it out and I recommend using the recipe as is. Also, the cones are chewy the next day so I plan on making them the day of the party and hoping they still have some crisp to them. Thanks for the recipe!

Country Scones

This recipe was great and super easy. I used craisins instead of currants. I also grated the rind of one lemon and juiced half of it in the dough to make lemon/cranberry scones. I did not make the topping instead I made a lemon glaze with powered sugar and lemon juice. SO YUMMY!

Playgroup Granola Bars

For those of you looking for a low-fat treat DO NOT use just applesauce. I used one cup of applesauce and whole wheat flour and they turned out so dense and not flavorful at all (with the whole wheat flour and reduced br sugar). So sorry I messed with this recipe now. I was looking forward to eating it! I will have to try this out without modifications next time.

Blonde Brownies I

These were great. I used a glass container and cooked for 25 minutes...it could have used another few minutes as the middle wasn't all the way done. I also added COCONUT flakes and mixed the chocolate chips up. These were good and I ate too many!

Baked Applesauce

I'm not sure why someone suggested adding water. I did and it did not need it - I had to drain it out in the end. A bit sweet, I will use less sugar next time, but still good.

Rosemary Turkey Meatloaf

This is a different taste than the traditional meatlaof. I made cupcake sized meatloafs (in a muffin pan) and they were moist...I did cut the milk a bit. This was different and I may make I again if I am in the mood for a nontraditional meatloaf.

Sausage Pasta

I was skeptical about the liquid and I didn't want to add the spinach as I thought the pan would oil over, but I am so glad I stuck to the recipe! It was great! I used turkey sausage and wheat penne pasta. Yum and healthy!

Chocolate Chip Cookies II

Avocado-Shrimp Salad

I loved this recipe. I sauteed the shrimp with olive oil and cilantro. I let the cucumbers, olives (I added these), tomatoes, avocados, and onion all marinate with a bit of evoo and the lime juice with salt n pepper. I served with buttered pita toast. Very pretty and yummy.

Fresh Tomato Shrimp Pasta

Fantastic! I made as stated but added fresh mushrooms and some black olives along with white wine. It was sooooo super good. I did not have fresh oregano so I used dried and I used canned tomatoes with basil.

Crispy Edamame

These are pretty good, but edamame steamed with salt is good too. These were not as good as I expected. I couldnt get them to crisp, even at 425. They tasted like edamame with cheese.

Lighter Snickerdoodles

The first time I made these I did not have white sugar so I used light brown sugar. I didn't rate them because I had changed the recipe. This time I followed it to the "t" and I just did not think these tasted like a regular snickerdoodle. They were a little cake-like and not that sweet to me. They tasted kind of plain. I actually liked them better when I used brown sugar (but you have to watch them because they burn easily). I cooked them on 375 for ten minutes...I cut them kind of thick. They were ok.

Black Bean Spinach Pizza

This was good...pretty flavorful. I made it as described, except that I did sautee the onions and garlic and I only put salsa on half of the pizza (but I do recommend using it...much more flavor with the salsa). I did not use hot sauce because my young son was eating it. I thought this was a very healthy meal(I used whole wheat crust) and I will probably use the recipe again. Thanks!
