Chantal's New York Cheesecake

I didn't have a springform pan handy, but this cheesecake came out wonderful without one. I put wax paper in the bottom of a round cake pan and sprayed it with cooking spray. As recommended by one reviewer, when it was done cooking, I turned the oven off and left the cake inside for a few hours. The cake came out of the pan with no problems. Because I used a pan that was more shallow, I had enough batter to make a second cake. I topped it with a can of cherry pie filling, and it was delicious. Not too rich.

Vegan Chocolate Cake

I made this cake using 1/2 cup of cocoa powder, and I also added about a cup of melted unsweetened chocolate with a few TBS of sugar, which made my batter really thick. I cooked the cake in a 9" round pan, and it came out moist with excellent chocolate flavor. I dusted it with powdered sugar instead of frosting. I would never guess this is a vegan cake!

Enchilada Sauce

This was delicious! I used vegetable broth instead of chicken to make it vegetarian. My only complaint is that it was really salty, and I will try to use a reduced sodium broth next time. I'm making this again this weekend and I can't wait!

Soft Sugar Cookies IV

These were easy to make, and I made them exactly as the recipe was written except with the addition of orange zest as one person suggested. I thought they were a little bland, even with the zest.

Coconut Macaroons III

My batter yielded 17 cookies. I decorated them with green maraschino cherries, and they looked good. However, I baked these for my mom's birthday, and they tasted so much like the sweetened condensed milk that I went to the bakery to buy real macaroons. I gave her the bakery cookies, but I decided to keep this recipe of cookies around, and I will say that they are getting better now that they are on their third day. Keep that in mind if you make these; the longer they sit, the better they get.
