Snow on the Mountain Green Beans

The lemon with the beans gives a wonderful flavour. I sauteed white onions and fresh garlic and added them to the mix. Very yummy and super healthy -- you can make double and reheat the next day.

Butternut Squash Risotto

I loved this recipe! I didn't mash my butternut squash, I boiled it and then diced it into small pieces. Added scallions, white onions and fresh chives from my garden. The white wine is the secret ingredient for this recipe. I'll try it again for sure!

Chicken Marsala

I'm giving this five stars because it is such a classic, no-fail recipe. Don't bother making this in advance if you are serving company -- the mushrooms are best if just cooked right before serving so that they have the right firmness. Very yummy! Best served with white wine -- because of the cooking sherry and marsala wine as ingredients I find you need something a little lighter than red wine to pair it with.

Soft Oatmeal Cookies

These turned out perfectly. I don't flatten them, added choco chips and coconut (1/4 cup). No cinnamon, extra vanilla. Perfection.

Chocolate Chocolate Chip Cookies II

These were excellent. I was out of brown sugar and had to use yellow golden sugar in its place, but they still turned out. I rolled the dough into smallish balls and didn't flatten them -- so the centre stays soft. I recommend these ones for sure.

Fettuccini Tomato Rustica II

This was amazing. I added 1 cup of red pepper tomato sauce and some (about 10) tiny baby pearl red onions to the chicken. I used goat cheese instead of feta and lemon pepper fresh linguini. Such a yummy combo. Dinner guests loved it up! Cook the chicken a day before so meal prep will be extra speedy if you have guests.

Fourteen Carat Cake

This made a really nice birthday cake for my daughter. I made it with vanilla cream cheese frosting. She loved it. I used my convection oven and needed an extra 15 minutes to cook through. I used a bundt pan.

Curried Zucchini Soup

Zucchini Soup has an amazing consistency and texture about it. It isn't grainy like potato-based soups can be. I find using a white onion is a must and I replaced the curry powder with thyme. My daughter is crazy about it. I add grated cheddar for her. This is a really nice soup. Some reviews suggest adding cream or milk but I prefer it as recommended. It freezes better this way.

Melt - In - Your - Mouth Shortbread

These are superb. Very delicate but not too flaky/dry. I decorated these with funny sayings bound to make my family and friends have a laugh. Yummy and a fun gift to send/receive!

Zucchini Risotto

I've tried many types of risotto but I hadn't thought of doing it with zucchini. This is great as a side dish with chicken breast. I served this with tomato chutney. Added two tablespoons of hot chilies to the recipe.
