Banana Muffins I
I have used this recipe so many times and my family adores them! I actually changed the flour to a 1/2 white 1/2 wheat mix and then tossed in some wheat germ, cinnamon & nutmeg, (my staples). They were so delicious and they freeze like a charm. They are especially great for salvaging those ripe bananas! I always add more banana though, and I don't mash them all very fine, I leave some chunks, and they are a dream.

Blueberry Peach Muffins
I loved this recipe. It is so funny because I actually HATE peach cobbler, but when I made these they tasted just like peach cobbler and I loved them! I did leave the blueberries out and added some cinnamon & nutmeg (which are my staples). I wish I could say they froze well, but I didn't have any left to freeze! I hope to make them again next summer when peaches bloom again here in GA.

Zucchini-Chocolate Chip Muffins
These were delicious! I actually left out the chocolate chips and walnuts, but added wheat germ, and used 1/2 wheat and 1/2 white flour. As a side note, I used a touch of nutmeg to spice things up a bit, as I thought they would turn out a little bland without it. I also substituted cinnamon applesauce for the oil. After baking them I wrapped them individually with "Press N Seal" and then tossed them into a gallon sized ziploc freezer bag and froze them. My husband and 2 year old son absolutely adore them, and with these changes they are even healthier!
